With Cinco de Mayo here, I am fixing one of my favorite recipes – ground chicken tacos. They’re easy, festive, and perfect for putting together a great meal without spending hours in the kitchen. In fact this has become one of my favorite taco recipes when I want something lighter than beef but still packed with bold, classic flavor.
Because we are cooking for two, this recipe is just the right size. It makes enough tacos to satisfy without leaving you with a refrigerator full of leftovers you feel pressured to use.
That said, this recipe is also incredibly flexible. If you want to cook a full pound of ground chicken, you absolutely can – and I’ll share a few easy ways to use the extra meat in other meals throughout the week.

Another thing I love about this recipe is that it uses a simple homemade taco seasoning made from pantry staples. It takes less than a minute to mix together and lets you control the salt and spice level. Of course, if you’re short on time, you can always substitute ½ packet of store-bought taco seasoning, and dinner will still be delicious.
Whether you’re planning a small Cinco de Mayo celebration or just craving tacos on a random weeknight, this ground chicken taco recipe is easy, affordable, and endlessly customizable.
Why Ground Chicken Works So Well For Tacos
Ground chicken often gets overlooked when it comes to tacos, but it’s actually one of the best proteins to use. It’s lean, cooks quickly, and absorbs seasoning beautifully. When paired with the right blend of spices and a little moisture, ground chicken becomes just as flavorful and satisfying as ground beef.
Another bonus is how versatile it is. Ground chicken works well in tacos, burrito bowls, lettuce wraps, casseroles, and even pasta dishes. That versatility makes it a smart protein to keep on hand – especially if you’re cooking for two and want ingredients that can stretch across multiple meals.
If you decide to cook a full pound of meat (because that is what you bought), you can easily use the extra seasoned chicken in another recipe later in the week. I often repurpose leftovers in dishes like stuffed peppers, taco salads, or even a quick skillet meal.

How To Make Your Own Ground Chicken And Save Money
One of the easiest ways to save money on this recipe is by making your own ground chicken at home. It sounds complicated, but it couldn’t be simpler.
All you need is boneless, skinless chicken breasts or thighs and a food processor. Cut the chicken into 1-inch chunks, place them in the food processor, and pulse until the chicken reaches a ground-meat consistency. Be careful not to overprocess – it should look like ground meat, not a paste.
Making your own ground chicken is much cheaper than buying it pre-ground, especially when chicken breasts or thighs are on sale. It also gives you complete control over the quality and fat content. For tacos, I like using a mix of breast and thigh meat if possible, as it adds a little extra juiciness.
Once ground, the chicken can be used immediately or stored in the refrigerator for a day or two, just like store-bought ground meat.
The Best Tortilla Size For Tacos
When it comes to assembling the tacos, tortilla size matters more than you might think. For ground chicken tacos, I recommend using 6-inch corn or flour tortillas. This size is ideal because it holds a generous amount of filling without overwhelming the tortilla or making the taco difficult to eat.
Corn tortillas deliver a classic, slightly nutty flavor and are perfect if you’re going for a more traditional taco experience. Flour tortillas are softer and more flexible, which makes them easier to fold and great for loading up with toppings.
If you’re hosting or planning a build-your-own taco night, warming the tortillas before serving makes a big difference. A quick pass in a dry skillet or wrapped in foil in the oven keeps them soft and pliable.

*A printable recipe card is located at the bottom of this article which contains the specific measurements, temperatures and cook times. However, continue reading below to learn about more helpful tips about this specific recipe.
INGREDIENTS
- ½ pound ground chicken
- 1 tablespoon olive oil
- ¼ cup onion, finely diced
- 1 clove garlic, minced
- ¼ cup chicken broth or water
Homemade Taco Seasoning
- 1 teaspoon chili powder
- ½ teaspoon ground cumin
- ½ teaspoon paprika
- ¼ teaspoon garlic powder
- ¼ teaspoon onion powder
- ¼ teaspoon salt
- ⅛ teaspoon black pepper
- Pinch of crushed red pepper flakes (optional)
For Serving
- 6-inch corn or flour tortillas
INSTRUCTIONS
- Heat the olive oil in a large skillet over medium heat. Once hot, add the diced onion and cook for 2–3 minutes, stirring often, until softened.
- Add the minced garlic to the skillet and cook for about 30 seconds, just until fragrant.
- Add the ground chicken to the skillet. Use a spoon or spatula to break it into small pieces as it cooks.
- Cook the chicken for 5-6 minutes, stirring frequently, until it is no longer pink and fully cooked through.
- Sprinkle the taco seasoning evenly over the chicken. Stir well to coat the meat evenly.
- Pour in the chicken broth or water and stir to combine. Let the mixture simmer for 2-3 minutes, allowing the liquid to reduce slightly and the flavors to come together.
- Taste and adjust seasoning if needed. Remove from heat.
- Warm the tortillas and serve the ground chicken tacos with your favorite toppings.
Homemade Taco Seasoning vs. Store-Bought
This homemade taco seasoning is quick, simple, and made entirely from pantry staples. It gives the chicken bold flavor without overpowering it, which is especially important with lean meat like ground chicken.
If you’re short on time or just want to keep things extra simple, you can substitute ½ packet of store-bought taco seasoning in place of the homemade blend. When using packaged seasoning, I recommend adding it gradually and tasting as you go, since salt levels can vary between brands.

Topping Ideas To Build The Perfect Taco
One of the best parts about tacos is customizing them exactly how you like. These ground chicken tacos pair well with a wide range of toppings, making them perfect for a casual Cinco de Mayo dinner or a laid-back taco night.
Some favorite topping options include:
- Shredded lettuce or finely sliced cabbage
- Diced tomatoes or pico de gallo
- Shredded cheddar, Monterey Jack, or a Mexican cheese blend
- Sour cream or plain Greek yogurt
- Sliced avocado or guacamole
- Fresh cilantro
- Diced red onion
- Salsa or hot sauce
For a little extra crunch, adding shredded cabbage or radishes works especially well with ground chicken.
Cooking A Full Pound And Using The Leftovers
While this recipe is designed around ½ pound of ground chicken, it easily doubles if you want to cook a full pound. This is especially helpful if you’re already cooking and want to plan ahead for another meal.
Double the amount of taco seasoning and then the extra seasoned ground chicken can be stored in an airtight container in the refrigerator for up to three days. I like using leftovers in taco salads, quesadillas, or rice bowls. Another great option is repurposing it into a simple skillet meal like my Tex Mex Skillet Dinner For Two.
Cooking once and using the meat twice saves time and makes weeknight dinners even easier.
Enjoy! Mary
