Instant Pot Baked Potatoes – Soft & Fluffy Potatoes Every Time!

One of the most versatile side dish recipes that you can make are these Instant Pot Baked Potatoes.

Not only are they easy to make, it is one recipe that it is easy to make for two people. Just purchase two baking potatoes and you are all set!

Then prepare the potatoes like you would if you were going to bake them, and place them in the Instant Pot.

And within 40 minutes, your potatoes will be ready to enjoy with your favorite main dish.

Instant Pot Baked Potatoes

INGREDIENTS

  • 2 Russet Potatoes, medium size

Optional Toppings:

  • Butter
  • Sour Cream
  • Chives
  • Bacon
  • Shredded Cheddar Cheese

INSTRUCTIONS

The first step in making Instant Pot Baked Potatoes is to wash and scrub the potatoes clean. Then poke 6-8 holes in each potato with a sharp knife.

Yes, you can poke the potato with a fork if you prefer. However, I find it easier to pierce through the skin and into the flesh with a small pairing knife.

Once the potatoes are ready, add 1 cup of water to the Instant Pot. Then place the trivet inside the water.

Now place the potatoes on the trivet. If you are using a 3 quart mini Instant Pot, you may need to overlap the potatoes.

However, if you have a larger 6 quart pressure cookers, the potatoes should be able to lay flat on the trivet.

Place the Russet potatoes on the trivet in the Instant Pot. Be sure to add a cup of water below the trivet so the pot comes to pressure.

Cooking Instructions

Now lock the Instant Pot lid in place and move the valve to the SEALING position. Press Pressure Cook/Manual and adjust to HIGH pressure if there is an option on your model.

Adjust the cook time button to 20 minutes.

Just like with all pressure cooker recipes, additional time is required for the pot to come to pressure before the actual cook time will begin.

Once the cook time expires, allow for 10 minutes of Natural Pressure Release. Then release any remaining pressure by slowly moving the valve to the VENTING position.

Once the pin drops, carefully remove the lid. Then use a pair of tongs to remove the potatoes and serve immediately.

If the potatoes are done cooking before you are ready to serve them, wrap them in aluminum foil to keep them warm.

Or you can keep the baked potatoes in the Instant Pot on the Keep Warm setting until you are ready to eat.

SERVING OPTIONS

Instant Pot Baked Potatoes are a very versatile side dish. You can serve them the traditional way with a pad or two of butter and a side of sour cream.

Of you can make them into a meal themselves. I like to slice them open and top them with taco meat, salsa, cheese and sour cream.

Or how about topping the potatoes with barbecue pulled pork, sloppy joe meat, or shredded Buffalo chicken?

The options are endless. I even save a half of a baked potato to make breakfast home fries the next morning! They are absolutely delicious and cook up in no time at all!

  5. Once the cook time expires, allow for 10 minutes of Natural Pressure Release before releasing any remaining pressure by moving the valve to the VENTING position.
  6. Remove the potatoes and serve immediately. Or place the potatoes in foil until ready to be served.
