However, I have to admit that I haven’t always been a fan of cube steak. I have vivid memories of my childhood when I was served a dinner of beef slathered in cream of mushroom soup.

If you are familiar with cube steak, but aren’t sure what cut of beef it is you’re not alone. This steak is most often a cut of top round or top sirloin. However, it has been mechanically tenderized by being pounded with a meat mallet.

This tenderizing process leaves the meat with a characteristic pattern of indentations. These markings that look like small cubes, is how it gets its name. Compared to other cuts of beef it is relatively inexpensive, making it a budget-friendly option.

INGREDIENTS

  • 1/2 lb. cube steak (2-3 individual cube steaks)*
  • 1/2 package dry onion soup mix (1/2 ounce)
  • 1 can condensed cream of mushroom soup (10.5 ounces)
  • 1/2 cup beef broth

*If you have extra cube steaks, be sure to make Chicken Fried Steak. Another delicious way to enjoy cube steak!

For Serving (optional)

  • 2 servings of mashed potatoes or 4 ounces egg noodles
  • fresh chopped parsley

INSTRUCTIONS

Place the cube steaks, onion soup mix, cream of mushroom soup and beef broth in a 4 quart crock pot. Cover and cook on low for 6-8 hours or until the beef is tender. I prefer to cook it for the entire 8 hours, but it really depends on how hot your crock pot cooks.

During the last 30 minutes of cooking, prepare the egg noodles per package instructions or make mashed potatoes (fresh, frozen or reheated).

Serve the steak and gravy warm over mashed potatoes or egg noodles.

For Serving (optional)

  • 4 ounces egg noodles or 2 servings of mashed potatoes
  • fresh chopped parsley

Instructions

  1. Place the cube steaks, onion soup mix, cream of mushroom soup and beef broth in a 4 quart crock pot.
  2. Cover and cook on low for 6-8 hours or until the beef is tender. I prefer to cook it for the entire 8 hours, but it really depends on how hot your crock pot cooks.
  3. During the last 30 minutes of cooking, prepare the egg noodles per package instructions or make mashed potatoes (fresh, frozen or reheated).
  4. Serve the steak and gravy over the egg noodles or over mashed potatoes.

Notes

  • If the sauce is not thick enough, use a corn starch slurry during the last hour of cooking. Stir 1 tablespoon of corn starch in 2 tablespoons of water then mix it into the liquid in the crock pot.
  • You can use any variety of condensed cream soup that you prefer. My other favorite is cream of celery soup.
  • Add in fresh sliced mushrooms and/or small new potatoes for added vegetables.
  • You can cook this recipe on high for 4-5 hours, however the cube steak is much more tender when cooked on low for 8 hours.
