Chicken and Stuffing Casserole Recipe

Chicken and Stuffing Casserole is a simple and comforting meal that’s easy to make, especially when you have some leftover cooked chicken on hand. Tender pieces of chicken, broccoli, a flavorful stuffing mix combined together in a creamy and cheesy sauce that ties everything together.

Best of all, it is so easy to make that it has become one of my favorite weeknight meals when I don’t have a lot of time to spend in the kitchen.

All you have to do is sauté some celery and onion in butter. Then you mix the veggies with the condensed soup and milk, which forms the base of the sauce.

Next, you add stuffing mix, chicken, broccoli, and cheese into the mixture before putting the ingredients in a baking dish and into the oven. Right before the casserole is done, add a little more cheese on top and once it melts your dinner is ready!

As you can see this casserole is quick and easy to make. I am sure that once you give it a try, it will become a go-to favorite weeknight meal in your home too!

Types of Chicken To Use In Chicken and Broccoli Casserole

The recipe calls for diced, cooked chicken breast, but you can use any cooked chicken you have on hand.

Rotisserie Chicken: If you have leftover rotisserie chicken, it works great in this recipe. It’s already cooked, and the seasoning adds a little extra flavor to the dish.

Chicken Thighs: If you prefer darker meat, chicken thighs are a good option. They tend to be juicier and more flavorful than chicken breasts. You can cook the thighs ahead of time and shred or dice them for the casserole.

Canned Chicken: In a pinch, canned chicken can be used. Just drain it well before adding it to the recipe. It won’t have as much flavor as fresh-cooked chicken, but the creamy sauce and stuffing will make up for that.

The Stuffing Mix

Stuffing mix gives this chicken casserole its classic, comforting flavor. The recipe uses half a package of standard box stuffing mix. If your box of stuffing comes with a separate seasoning pack, you will also use half of that as well to add more flavor to the casserole. However, you also have some options when it comes to what type of stuffing mix to use.

Different Flavors of Stuffing: Traditional stuffing mix is usually made with bread crumbs, herbs, and seasonings. You can find different flavors like chicken, turkey, herb, or even cornbread stuffing. Any of these will work, depending on what flavor you prefer.

Gluten-Free Stuffing: If you’re avoiding gluten, you can find gluten-free stuffing mixes at the store. They’ll work just as well in this casserole.

What Vegetables To Use In Chicken and Stuffing Casserole

The recipe calls for fresh broccoli florets, but you can use other vegetables if you prefer or if broccoli isn’t your favorite.

Frozen Broccoli: If you don’t have fresh broccoli, frozen broccoli can be used. Just make sure to thaw and drain it well before adding it to the casserole so the extra moisture doesn’t make the dish watery.

Cauliflower: For a similar texture but a slightly different flavor, you can swap the broccoli for cauliflower. Either fresh or frozen works.

Mixed Vegetables: A blend of frozen mixed vegetables, like carrots, peas, and corn, can also be a good choice. It adds some color and variety to the dish.

Mushrooms: If you love mushrooms, try adding some sliced mushrooms along with the celery and onion when you sauté them. They’ll add an earthy flavor that goes well with the chicken and stuffing.

Cheese Options

This Chicken and Stuffing Casserole recipe uses shredded Colby Jack cheese, which melts beautifully. However you can use just about any variety of shredded cheese that you prefer.

Cheddar Cheese: Cheddar is always a classic choice for casseroles. It melts well and has a sharp flavor that goes nicely with the creamy sauce and stuffing.

Mozzarella: For a milder option, mozzarella works well. It’ll give the casserole a gooey, melty texture without adding a strong flavor.

Creamy Sauce

The sauce in this Chicken and Stuffing Casserole is made by combining cream of mushroom soup and milk. This creates a creamy base that holds everything together. Although, just like with the other ingredients use what you prefer.

Cream of Chicken Soup: If you’re not a fan of mushrooms, you can use cream of chicken soup instead. It’ll have a similar texture but a different flavor.

Cream of Celery Soup: Another option is cream of celery soup, which has a milder flavor and can work well with the other ingredients in the casserole.

Make It From Scratch: If you prefer to avoid condensed soups, you can make a homemade version by creating a simple white sauce with butter, flour, milk, and some chicken or vegetable broth for flavor.

Storing and Reheating Leftovers

This casserole makes great leftovers as the flavors will have even more time to meld together. If you have extra, here’s how to store and reheat it:

  • Storing: Once the casserole has cooled, transfer any leftovers to an airtight container and store it in the fridge for up to 3 days.
  • Reheating: To reheat, you can microwave individual portions or pop the casserole back in the oven at 350°F for 15-20 minutes, or until heated through.

INGREDIENTS

  • 2 tablespoons butter, unsalted
  • 1 celery rib, diced
  • 1/4 cup onion, diced
  • 1/2 can condensed cream of mushroom soup, low-sodium or salt-free
  • 3/4 cup milk
  • 1/2 package (3 ounces) stuffing mix*
  • 1 cup cooked chicken breast, diced
  • 1 cup fresh broccoli florets, cooked
  • 1 cup shredded Colby Jack cheese, divided

INSTRUCTIONS

Preheat oven to 375°F and spray an 8 x 8 inch baking dish with non-stick cooking spray. Set aside.

In a medium size skillet placed over medium-high heat add 2 tablespoons butter. Once the butter melts add the diced celery and onion and saute until tender (4-5 minutes). Transfer the mixture in a large bowl.

Add the soup and milk to the bowl with the celery and onions and mix until well blended. Add the stuffing mix with 1/2 of the seasoning packet (if it comes with one), chicken, broccoli, 1/2 cup of the cheese and stir until well combined.

Pour the mixture into the prepared baking dish. Bake uncovered for 20 minutes or until heated through.

Then sprinkle the top with the remaining cheese and bake for an additional 5 minutes or until the cheese melts. Remove the pan from the oven and serve warm.
