Chicken and Zucchini Casserole Recipe

When it comes to easy weeknight dinner recipes it doesn’t get much better than this Chicken and Zucchini Casserole. With just 7 ingredients, it is one of my favorite weeknight dinner recipes to make in the middle of summer, especially when there are plenty of fresh zucchini coming out of my garden.

Best of all, it takes only 10 minutes to assemble. Then put it in the oven and in 40 minutes a complete and delicious dinner is ready.

Creamy chicken and tender chunks of zucchini cooked with store bought stuffing mix. The simple combination of ingredients makes for a fantastic meal that can be enjoyed any day of the year.

Although there are only 7 ingredients, the flavors pair perfectly together. This casserole makes enough that you can enjoy a hot dinner for two and have a little leftover for lunch the next day.

It is one of my favorite recipes to make when zucchini are in season. However, I also like to make this recipe when I need a warm and satisfying comfort food meal in the middle of winter.

Chicken and Zucchini Casserole Recipe

INGREDIENTS

  • 1/2 box chicken stuffing mix (approximately 2 cups)
  • 1/4 cup butter melted
  • 1 medium size zucchini, diced
  • 2 cups cooked and diced chicken*
  • 1/4 yellow onion, diced
  • 1/2 can canned cream of chicken soup, low-sodium
  • 1/4 cup sour cream

*If you prefer to use fresh, raw chicken breast, use 1 medium size chicken breast and cut it in small cubes. Then increase the cook time to 1 hour.

However, if you choose to use raw chicken breast in this recipe be sure that the internal temperature of the chicken reaches 165°F when tested with an instant read digital thermometer. (See Product Affiliate Link: Instant Read Digital Thermometer).

Dice the zucchini into bite size pieces so that it cooks perfectly when put in the oven.

INSTRUCTIONS

Start by preheating the oven to 350°F (177°C). Then spray a 8 x 8 inch baking dish or a small oval casserole dish with nonstick cooking spray and set aside.

In a large microwaveable safe bowl add the butter. Heat it at 30 second increments until the butter melts. Remove the bowl from the microwave and add the chicken stuffing mix. Stir until all of the stuffing mix is moist.

Remove 1/4 cup of the stuffing and set it aside. This will be used as the crunchy topping on top of the chicken and zucchini casserole.

Cut the zucchini in 1/2 inch, bite size pieces. You don’t have to peel the zucchini but if you prefer you can. Then dice the onion into small pieces.

Be sure to stir the stuffing and melted butter together until all of the bread pieces are moist.

Mix The Ingredients Together

Add the diced zucchini, diced cooked chicken, onion, cream of chicken soup, and sour cream to the bowl with the moist stuffing. Stir to mix everything together until well incorporated.

Spread the mixture in the prepared baking dish. Use a spatula to spread the mixture evenly. Then sprinkle the reserved stuffing mix on top of the casserole.

The topping will not cover the entire surface. However, it will add a little crunch to the casserole. Once the topping has been added place the baking dish in the preheated oven and then bake for 40-45 minutes.

If you are using uncooked chicken, remember to increase the bake to 1 hour. Be sure to check the chicken for doneness with an instant read digital thermometer before serving.

The casserole is ready to remove from the oven when it is heated through, bubbly up the sides and the top stuffing turns golden brown in color. Or if using uncooked chicken when the internal temperature reaches 165°F when tested with an instant read digital thermometer.

Remove the dish from the oven and let it sit for a few minutes before serving.

A delicious casserole that uses leftover rotisserie or cooked chicken and garden fresh zucchini. A creamy and delicious recipe to feed the family!

Instructions

  3. Once the butter is melted add the stuffing mix and mix until the stuffing is completely moist. Remove 1/4 cup of the stuffing and set aside (this will be used for the topping later).
  4. Add the diced zucchini, diced cooked chicken, onion, cream of chicken soup, and sour cream to bowl with the stuffing and mix until well incorporated.
  5. Spread the mixture evenly in the prepared baking dish.
  6. Sprinkle the reserved stuffing mix on top of the mixture (it won't cover the entire topping) and place the baking dish in the preheated oven and bake for 40-45 minutes. The casserole is done when it is heated through, bubbly up the sides and the top is golden brown.
  7. Remove the baking dish from the oven and let it sit for 5 minutes before serving.

Notes

  • *If you want to use raw chicken breast cut a medium size chicken breast into small bite size pieces. Then assemble the casserole as instructed and increase the bake time to 1 hour.
  • When using raw chicken breasts be sure to check the internal temperature of the chicken pieces with an instant read digital thermometer to be sure they are cooked to 165°F before eating.
