What Type Of Chicken To Use To Make Fajitas
Although there are a few options when it comes to what type of chicken to use to make this chicken fajitas recipe, the most common choice is boneless, skinless chicken breast. However you could also use chicken tenderloin strips and even boneless, skinless chicken thighs if you prefer.
You will need half of pound of chicken for two generous size portions. I prefer to purchase a pound of chicken breasts and then I know to use half of the package.
This way I don’t have to pull out my Kitchen Scale to measure out the exact amount. However, in general 1 large chicken breast or 2-3 smaller ones will equal approximately a half of a pound.
Easy Homemade Fajita Seasoning
When it comes to how to season the chicken and vegetables, you have two choices. You could purchase a packet of pre-made fajita seasoning or make your own homemade seasoning.
Although your first thought may be that it is much easier and convenient to purchase a packet from the grocery, I find it much easier to make my own. In fact, you can make it with just a few basic spices that you most likely already have in your kitchen.
Not only is it easy to make but you also know what ingredients that are actually included in the mixture. That means there is no worry of preservatives or hidden ingredients added to the seasoning.
Another advantage of making your own chicken fajitas seasoning is that you will be making the exact amount needed for this recipe. That means that you also don’t have to worry about what to do with the other half of the packet before it goes bad.
Make Ahead Option
Although this recipe can be prepared in under 30 minutes, there are a few ways to make this process even faster when it comes time to make dinner. Doing a little meal prep ahead of time will save you time in the kitchen on a busy weeknight.
1. Mix The Fajita Seasoning – You can combine the spices to make the fajita seasoning several days in advance. However be sure to store the seasoning in an air-tight container so it doesn’t clump together.
2. Prepare The Chicken Breast – To save time go ahead and slice the chicken into thin strips. Just be sure to cut them into 1/4 inch strips for even cooking. Then store in an air tight container in the refrigerator until ready to use.
3. Slice The Veggies – Cut the onion, red pepper and green pepper into thin strips up to 48 hours in advance. Be sure to store the cut veggies in an air tight container in the refrigerator to prevent them from becoming mushy. You can also dice a jalapeno ahead of time as well.

INGREDIENTS
Homemade Fajita Seasoning
- 1/2 tablespoon chili powder
- 1/2 teaspoon cumin (ground)
- 1/2 teaspoon smoked paprika
- 1/8 teaspoon cayenne pepper
- 1/2 teaspoon salt
- 1/2 teaspoon ground black pepper
Other Ingredients
- 1/2 pound chicken breasts (boneless and skinless)
- 1/2 large onion
- 1/2 medium red bell pepper
- 1/2 medium green bell pepper
- 1 tablespoon olive oil, divided
- 1/2 jalapeno (optional)
INSTRUCTIONS
To start the recipe begin by making the homemade chicken fajitas seasoning. In a small bowl add the chili powder, cumin, smoked paprika, cayenne pepper, salt and black pepper. Mix until combined. Set aside.
Cut the chicken breasts into long strips. Set aside.
On another clean cutting board slice the onion, red peppers and green peppers into long 1/4 inch strips. Set aside.
Heat 1/2 tablespoon olive oil in a medium size skillet over medium-high heat. Add the chicken to the skillet then add half of the fajita seasoning to the chicken. Toss to coat.
Cook the chicken for 7-10 minutes or until the chicken is cooked to an internal temperature of 160°F. Remove the chicken from the skillet and set aside.
Add another 1/2 tablespoon of olive oil to the skillet. Then add the sliced onion and cook for a couple minutes until it is beginning to turn translucent.
Add the sliced peppers to the skillet and add the remaining fajita seasoning and toss to coat. Cook for 3-5 minutes to cook the peppers just until slightly tender but still slightly crunchy.
Add the chicken back to the skillet and toss with the peppers.
Serving Options
Serve inside tortillas and top with salsa, sour cream and/or guacamole. You can also serve the chicken fajitas as a burrito, in salads, or as a stand alone, low-carb meal.
