Cilantro lime chicken is one of the easiest and most delicious ways to turn boring boneless, skinless chicken breasts into something bright and flavorful. The combination of fresh lime juice, chopped cilantro, smoky paprika, and a hint of honey gives every bite a burst of tangy, sweet, savory goodness.
And when you make cilantro lime chicken with thin boneless, skinless chicken breasts, it cooks quickly and remains tender and juicy when prepared correctly.
This cilantro lime chicken recipe works perfectly for weeknight dinners, weekend grilling, or even meal prepping lunches for the week ahead. It requires only a handful of simple ingredients and uses a marinade that infuses incredible flavor into the chicken in very little time. Plus, you can cook it on the stove top, bake it in the oven or air fry it depending on your cooking preference.

Not only is cilantro lime chicken easy to prepare, but it pairs with so many different side dishes. From rice bowls to tacos to salads, it’s a versatile protein that fits into a variety of meals. If you love bold flavors with minimal prep, this cilantro lime chicken is sure to become a go-to in your kitchen as it has in mine.
Ingredients Needed For Cilantro Lime Chicken
One of the many reasons cilantro lime chicken has become a staple in our house is that you don’t need a lot of ingredients for it to shine. In fact, several items are pantry staples you may already have on hand. Here’s what you need for the marinade and chicken:
- Two thin boneless, skinless chicken breasts
- 2 tablespoons lime juice (freshly squeezed is best)
- 1 tablespoon lime zest
- 3 tablespoons fresh cilantro, finely chopped
- 2 tablespoons olive oil
- 1 tablespoon honey
- 1 teaspoon paprika (I prefer to use smoked paprika)
- 1 teaspoon garlic powder
- 1 teaspoon salt
- ½ teaspoon black pepper
Every ingredient in this marinade works together: lime juice helps tenderize the chicken, cilantro adds freshness, paprika and garlic powder bring warmth and savory depth, and honey balances the citrusy tang.
How To Prepare The Marinade
The marinade is what makes cilantro lime chicken so flavorful, and it comes together in minutes. Simply add lime juice, lime zest, cilantro, olive oil, honey, paprika, garlic powder, salt, and black pepper to a small bowl and whisk until smooth and well combined.
This mixture coats the chicken and helps lock moisture inside as it cooks. For best flavor, allow the chicken to rest in the marinade for at least 30 minutes in the refrigerator.
However, just like when making my other Chicken Marinade Recipes it is best to let it soak up the flavors for 4-6 hours is even better. You can also prepare the marinade in the morning so your cilantro lime chicken is ready to cook quickly when dinner time rolls around.

Baking/Air Frying/Pan Frying Cilantro Lime Chicken
There are three ways to cook cilantro lime chicken, and all of them produce juicy and tender results when checked with a meat thermometer. Chicken breasts can overcook fast, so always keep an eye on the internal temperature – 165°F is the magic number.
- Once the chicken has marinated, remove the bowl or bag from the refrigerator and let the chicken sit at room temperature for 10-15 minutes while you preheat your cooking appliance.
- For oven-baking, preheat your oven to 400°F and place the chicken breasts onto a parchment-lined baking sheet or shallow baking dish. Bake for 16–20 minutes, depending on thickness, flipping once halfway through. Use an instant-read thermometer to make sure the center reaches 160°F.
- For air frying, set the air fryer to 400°F and place the chicken in a single layer in the basket. Cook for 12–15 minutes, flipping at the halfway mark and checking for doneness.
- Pan Frying – place a large skillet over medium high heat. Add 2 tablespoons of olive oil to the pan. Once hot, add the chicken to the skillet and cook for 10-15 minutes, flipping 1-2 times until the internal temperature reaches 160°F at the thickest portion of each breast.

Once cooked, let the cilantro lime chicken rest on a plate for about five minutes before slicing or serving. This helps the internal temperature to rise to 165°F and it also allows the juices to redistribute so the meat stays tender.
Why Cilantro Lime Chicken Is A Must Make
Cilantro lime chicken is a great recipe to keep in your meal rotation year-round. It has a bright, fresh flavor that is welcome during warm summer days. But it also works beautifully indoors during the colder months to warm you up.
The marinade gives the chicken layers of flavor without any complicated steps or hard-to-find ingredients. Chicken breasts can sometimes come out dry when baked. However the acidity from the lime juice and olive oil helps it retain moisture.
The honey gently caramelizes on the chicken surface while cooking, resulting in a tender bite with a slight golden finish. That is why this cilantro lime chicken is not only tasty but also ideal for cooks who prefer healthy recipes over heavy sauces.
Ways To Serve Cilantro Lime Chicken
One thing I love most about cilantro lime chicken is how many delicious meals you can make with it. Here are a few serving ideas to help inspire dinner tonight:
- Slice and serve over a bowl of warm rice with black beans and avocado
- Add to tacos with shredded lettuce and pico de gallo
- Pair with roasted vegetables or grilled corn for a lighter meal
- Serve with mashed potatoes or cheesy rice for extra comfort
- Slice thin and top a big dinner salad with fresh tomatoes and a squeeze of extra lime
- Chop it up for a hearty burrito bowl with salsa and sour cream
Every serving idea brings out a slightly different flavor profile. This makes it easy to serve cilantro lime chicken multiple times without it ever feeling repetitive.

Meal Prep Option
If you like to prep meals for the week, cilantro lime chicken is a fantastic protein to include. You can marinate multiple portions at once and cook them together. Then store the cooked chicken in airtight containers to enjoy in salads, wraps, grain bowls, or tacos throughout the week.
The flavors continue to develop as the chicken rests, so leftovers taste just as delicious – sometimes even better the next day. Keep leftovers refrigerated and enjoy within 3-4 days.
You can also freeze the uncooked, marinated chicken for up to 6 months in an air-tight container. This is especially helpful when you don’t know what to make for dinner on a busy weeknight.
Enjoy! Mary
