Coffee Mug Cake – An Easy To Make, Cake For Two!

It is a great recipe for an after dinner dessert for two, late night cravings, or when you have an unexpected guest show up for coffee in the morning.

Moist and delicious coffee cake topped with a streusel topping and a sweet glaze that will satisfy any sweet tooth. And although this recipe calls for just one coffee mug, it makes enough to serve two people. Or simply double the recipe if you want each person to have their own individual serving.

Coffee Mug Cake Recipe

INGREDIENTS

2 tablespoons unsalted butter
1/4 cup packed light brown sugar
1/4 cup milk
1/2 teaspoon pure vanilla extract
6 1/2 tablespoons all-purpose flour
1/2 teaspoon ground cinnamon
1/4 teaspoon baking powder
1/4 teaspoon kosher salt

Topping Ingredients

2 tablespoons unsalted butter
3 tablespoons all-purpose flour
2 tablespoons packed light brown sugar
1/4 teaspoon ground cinnamon
1/4 teaspoon kosher salt

Glaze Ingredients

2 tablespoons confectioner’s sugar
1 teaspoon milk

INSTRUCTIONS

The first step in making this coffee mug cake is to find a 12 ounce microwaveable-safe coffee cup. Although you could use a larger coffee cup, the 12 ounce size is the ideal size for making this cake recipe.

However, if you would like to make two smaller portions, instead of one larger cake, then you could use two, 8-ounce microwave-safe coffee mugs.

Start making the cake by placing butter in the coffee cup and melt it in the microwave. Once melted, add the packed light brown sugar, milk, and vanilla extract to the cup with the melted butter and stir using a fork.

Continue to stir until the sugar is mostly dissolved. Then add the flour, cinnamon, baking powder, and salt.

Continue to stir with the fork until well incorporated and no clumps of flour are visible. Set the coffee mug with the batter aside to make the topping.

Be sure to stir all of the batter ingredients together so that the flour is fully incorporated.

Topping Instructions:

In a small microwavable bowl melt the butter. Then add the flour, packed light brown sugar, cinnamon, and salt to the bowl with the melted butter.

Stir the coffee mug cake topping with a fork until small crumbles appear. Then sprinkle the streusel topping over the batter in the coffee mug.

Place the cup in the microwave on high power for 2 – 2 1/2 minutes. You want to microwave the cake long enough that when a toothpick inserted into the center comes out clean.

*It is okay to have one or two small moist pieces stuck to the toothpick. However, you don’t want to see batter still on the toothpick once it is removed.

Cooking times will vary depending on the power of your microwave. Start checking for doneness at the 2 minute mark. Then continue to microwave in 15 second increments until the cake is done.

It is important to know that the cake will rise during the cooking process. This is why it is so important to use a large, 12 ounce mug so that the cake has room to expand.

When the cake is done cooking, carefully remove it from the microwave and set it on a heat resistant surface. Let it cool for a few minutes while you make the glaze.

Glaze Instructions:

To make the glaze that goes on top of the coffee mug cake use a simple mixture of confectioner’s sugar and milk. Add the glaze ingredients in a small bowl and stir until smooth.

The mixture should be thick but still able to be drizzled on top of the cake. Add more milk to thin it out as needed, or add more confectioner’s sugar if the glaze needs to be thickened.

Drizzle the glaze over the coffee mug cake and serve immediately. If the glaze is poured on top of a warm cake, it will soak into the streusel topping.

This is perfectly okay and absolutely delicious. However, if you want the presentation of the glaze drizzled on top, then wait until the cake has cooled before adding the glaze.

Once a toothpick that is inserted in the center of the cake comes out clean, remove the coffee mug from the microwave and let it sit until you make the glaze.
