This Creamy Chicken Bake recipe has become one of my favorite comfort food meals when I don’t have a lot of time to spend in the kitchen. Tender pieces of chicken topped with fresh spinach, mushrooms and two different types of cheese and then baked to perfection.
It is easy to prepare and can be made and ready in the oven in under 10 minutes. It is the perfect weeknight meal that always seems to hit the spot, especially when you want something warm and hearty on a cold winter day.
Eat it as-is for a low-carb meal. Or if you are craving something a little more satisfying, serve it with cooked pasta or over rice.

I love recipes like this because they come together fast and use everyday ingredients that many of us already keep on hand. Fresh spinach adds great texture, mushrooms bring depth of flavor, and the chicken stays moist as it bakes under a blanket of cream cheese and melted mozzarella.
The final result is a creamy chicken bake that feels like comfort food but doesn’t leave you feeling weighed down. And even better, the leftovers reheat beautifully for lunch the next day.
Although my original version of this recipe makes a full pan to feed our entire family, today’s recipe is scaled down for just two servings, which is perfect when you want a home-cooked meal without a mountain of extra food waiting in the fridge.
The smaller batch still delivers the same creamy, cheesy finish, just in a size that works for everyday dinners. But feel free to double the recipe if you are feeding family or friends.
Why This Creamy Chicken Bake Works So Well
This creamy chicken bake also works well for meal prep. You can assemble the dish earlier in the day, cover it, keep it chilled, and then simply bake it when you’re ready for dinner. It’s just as convenient for busy weeknights as it is for weekend comfort meals.
And because the chicken stays surrounded by moisture from the broth, cream cheese, and vegetables, it never dries out. Each bite stays tender and full of flavor.
One of the best things about this dish is how versatile it is. If you prefer a stronger onion flavor, you can add chopped green onions on top before baking. If you love garlic, stir a little minced garlic into the mushrooms as they sauté.
You can even switch the mozzarella cheese to Monterey Jack or provolone if you want to change the flavor slightly. The basic creamy chicken bake recipe stays solid, but these small adjustments help personalize the dish to suit your taste.
Meals that require just a skillet and one baking dish are always high on my list because cleanup stays quick. For busy nights, that can make all the difference. You still get a meal that tastes like something you worked on all afternoon, even though the hands-on time is minimal.

How Spinach and Mushrooms Add Flavor
As the creamy chicken bake cooks, the cream cheese melts into the broth and vegetables, creating a silky sauce that coats the chicken without becoming too heavy. The mozzarella melts on top and turns lightly golden near the end of the baking time, giving the dish a beautiful finish.
The mushrooms release their natural juices as they cook. However, if you aren’t a mushroom lover, you can simply omit them.
As the spinach cooks, it wilts into soft, tender layers that blend perfectly with the sauce, helping balance the creaminess of the dish. These vegetables don’t overpower the chicken – they simply enhance the overall flavor while adding both a pop of color and texture.
Best Sides To Serve With This Creamy Chicken Bake
This recipe pairs wonderfully with simple side dishes that help soak up the creamy sauce. Some of the best options include:
- A small portion of buttered noodles works perfectly under a spoonful of the sauce from the baking dish.
- Roasted vegetables or steamed broccoli make a great vegetable side and keeps dinner low in carbs.
- Mashed potatoes give you another warm pairing (my favorite: Red Skin Garlic Mashed Potatoes).
- A simple green salad with a light dressing brings freshness to your meal.
No matter which direction you go, this creamy chicken bake fits easily into a full dinner without requiring special ingredients or complicated steps.

Tips For Baking The Chicken Perfectly
By the time the creamy chicken bake finishes cooking, the chicken will be tender, the vegetables will be soft, and the sauce will be bubbling around the edges. Just be sure to the dish rest for five minutes before serving. This helps the sauce settle and makes each serving easier to plate neatly.
If your chicken breasts are on the thicker side, you can pound them lightly to an even thickness before seasoning them. This ensures even cooking and helps the chicken absorb more flavor. If you happen to use larger chicken breasts, you may need to extend the baking time slightly until the internal temperature reaches 165°F when checked with an instant read digital thermometer.
Another tip is to keep the foil on during the first part of baking. This traps steam, helping the chicken stay moist. Removing the foil at the end lets the cheese melt and brown slightly, giving the dish its final texture and appearance.

Why Leftovers Reheat So Well
If you’re lucky enough to have leftovers, this creamy chicken bake reheats beautifully. The sauce thickens slightly in the refrigerator, and warming it gently brings it right back to a creamy consistency.
You can reheat it in the microwave or warm it on the stovetop in a covered pan. It’s one of those dishes where the flavors deepen on the second day, making it just as good, if not better when reheated.
Creamy Chicken Bake – An Easy Dinner Recipe
If you love simple, flavorful meals that are warm and comforting without requiring complicated steps, this creamy chicken bake will quickly become a favorite in your dinner rotation.
It delivers great flavor with minimal prep, and it works equally well for date-night dinners, quick weeknight meals, or as your new favorite weekend comfort food.

Creamy Chicken Bake With Mushrooms & Spinach
A simple and comforting creamy chicken bake with spinach and mushrooms. Easy to assemble, full of flavor, and perfect for two servings.
Ingredients
- 2 thin-sliced chicken breasts
- 2 cups fresh baby spinach
- 1 ½ cups sliced mushrooms
- 3-4 tablespoons green onion cream cheese
- 1 ½ tablespoons olive oil
- 3 tablespoons chicken broth
- Dash of pepper
- Dash of herb and garlic seasoning
- ½ cup shredded mozzarella cheese
Instructions
- Preheat oven to 375°F (190°C).
- Heat the olive oil in a skillet over medium heat. Add the mushrooms and sauté for 3–4 minutes until tender.
- Add the spinach and cook until just wilted. Season with pepper and herb and garlic seasoning.
- Spread a thin layer of green onion cream cheese in the bottom of a small baking dish (around 8×8 or similar).
- Place the chicken breasts on top. Spoon the mushroom and spinach mixture over the chicken.
- Add small dollops of the remaining cream cheese across the top.
- Drizzle chicken broth evenly over everything.
- Sprinkle mozzarella cheese generously on top.
- Cover the dish with foil and bake for 25 minutes. Remove foil and bake an additional 10–15 minutes, until the chicken is cooked through and the cheese becomes melted and lightly golden.
- Let it rest for 5 minutes before serving.
Notes
- If your chicken breasts are thicker than standard thin-sliced pieces, you can gently pound them to an even thickness. This helps them cook evenly and soak in more flavor as they bake.
- Green onion cream cheese adds a mild onion flavor, but you can swap it with garlic herb cream cheese, plain cream cheese, or even whipped cream cheese if that’s what you have on hand.
- If you prefer a stronger cheesy finish, you can mix half mozzarella and half provolone or Monterey Jack. All of them melt beautifully and add great flavor.
- Baby spinach wilts down significantly, so don’t be afraid to pack the skillet full when sautéing it. It will cook down to just the right amount for the dish.
- Mushrooms release moisture as they cook. If you want a slightly thicker sauce, sauté the mushrooms one extra minute to evaporate a little more of the liquid.
- This dish reheats extremely well. Warm leftovers on low heat so the sauce stays creamy and the chicken remains tender.
