Now that the weather has turned cooler, it is time to share one of my favorite comfort food recipes, Crock Pot Beef Tips And Noodles. Chunks of beef and sliced mushrooms slow cooked in a seasoned beef broth until they are melt in your mouth tender.
Then before serving, thicken the liquid so it turns into a delicious gravy. Pour the mixture over a bed of cooked egg noodles and you have a heart warming comfort meal that will keep you feeling full for hours.
It is the perfect meal to serve on a cold winter day. Yet it is elegant enough to make for any special occasion.
It is so good that it is hard to believe that something this delicious can be prepared in a matter of minutes. Especially when this recipe is made with no canned condensed cream of mushroom soup.
Although most beef tip recipes include this popular soup as the base of the gravy, I prefer to use other ingredients that add more flavor to the dish.
However, don’t be scared by the amount of ingredients required in this recipe. Most of them you probably already have in your kitchen.
Ingredients Required To Make Crock Pot Beef Tips And Noodles
1. Extra Virgin Olive Oil
This is used to sear the beef tips before they go into the slow cooker. As much as you might want to skip this step, please do not.
The searing adds another layer of flavor that you can’t get if you don’t brown the meat. It only takes a few minutes, and you will be glad you did!
2. Stew Meat
Stew meat is made from cuts of beef with lots of tough connective tissue. It is most often cut from chuck and/or round roast.
When you simmer it in a liquid for long periods of time the connective tissue breaks down and becomes melt in your mouth tender. Although you could cut your own stew meat from a roast, it is most likely that you will purchase a package in the meat section at the grocery store.
However, stew meat often comes in large packages. Because we are cooking for two, you will have leftover stew meat.
You can choose to freeze it for another round of crock pot beef tips and noodles. Or even better, make this delicious Beef Stew For Two recipe later in the week.
3. Beef Broth
This is one ingredient that I rarely keep in my pantry. However, if you don’t want to run to the grocery to pick some up for this recipe there is another option.
You can use bouillon cubes or granules to make a beef broth substitute. To create the equivalent of 1 cup of beef broth, combine 1 cube or 1 teaspoon of granules with 1 cup of boiling water. Then mix until you can no longer see any granules.
4. Dry Onion Soup Mix
As I prepare for winter, I stock up on a few packets of seasoning mixes to use throughout the cold months. Taco seasoning, chili seasoning, gravy mixes and dry onion soup mix are among the ones that I store in my pantry.
They come in handy when you want to add a little flavor to your meals without a lot of work. Because you will need only a portion of the packet, you will have enough left over to add to other recipes throughout the week.
Start by making a dip for veggies or chips so you can enjoy it as you watch your favorite football team or television show. Or add a little flavor to your meatloaf or pot roast recipe. You can even throw some in to add flavor to your homemade chicken noodle soup!
5. Worcestershire Sauce
I always have a bottle of Worcestershire sauce in my refrigerator. It is an easy way to get a ton of flavor into your meals.
The balance of tangy, savory, sweet, and salty flavors makes it the perfect addition to the crock pot beef tips and noodles recipe.
6. Onions & Mushrooms
Onions and mushrooms are added to the recipe to not only provide flavor, but texture as well. However, if you aren’t a mushroom fan, you can definitely omit them from the recipe.
But if you are going to add the mushrooms, purchase mushrooms that have flavor. Although they are a little more expensive, skip the white button mushrooms and opt for the cremini mushrooms instead.
And to make life easier, purchase mushrooms that are already sliced. This way you can throw them in the slow cooker without any additional work.
7. Garlic Clove
I always prefer using fresh garlic whenever possible. And to make it easy, I use a garlic press to mince the garlic clove.
There is no peeling of the garlic required. Simply place the clove in the press and squeeze.
However, you could also use refrigerated minced garlic in place of a fresh clove. 1/2 teaspoon of jarred minced garlic equals 1 garlic clove.
8. Water & Cornstarch
The mixture of water and cornstarch is used to make a slurry. The slurry is then added to the liquid in the crock pot to thicken the beef tips and noodles gravy.
It is important to use an equal ratio of water to cornstarch to make the slurry. But don’t just use any water. You must use cold water when mixing with cornstarch so there aren’t large clumps in the mix.
Then simply add the slurry to a hot liquid to help it thicken.
Crock Pot Beef Tips And Noodles Recipe

INGREDIENTS
- 3/4 Tbsp extra virgin olive oil
- 1 pound stew meat
- salt and pepper
- 1 1/2 cups beef broth
- 1 1/2 teaspoons dry onion soup mix
- 1 teaspoon Worcestershire sauce
- 1/4 cup diced onion
- 1/2 cup sliced mushrooms
- 1 garlic clove, minced
- 1 Tablespoons water
- 1 Tbsp cornstarch
For Serving
- 4 ounces wide egg noodles
- chopped fresh parsley
INSTRUCTIONS
Start by cutting the stew meat pieces in half if desired. Although this is an optional step, I find that typical stew meat is very large which makes it difficult to eat without cutting.
Once the meat is cut season it with salt and pepper to taste and set aside.
In a large skillet placed over medium high heat add the extra virgin olive oil. Then add the stew meat to the skillet and sear on all sides until no longer pink, but not cooked all the way through.
Place the stew meat inside the slow cooker. Pour in the beef broth, and then add the dry onion soup mix, Worcestershire sauce, diced onions, sliced mushroom, and garlic to the crock pot.
Cook Time Required
Stir and cook on low for 5-6 hours or high 3-4 hours. If you have a Programmable Crock Pot, allow it to go to the Keep Warm setting after the cook time is up.
30 minutes before the beef tips are done cooking, in a small bowl mix together the water and cornstarch. Stir it into the slow cooker and allow the juices to thicken.
While the gravy is thickening, place a large pot of salted water over medium high heat. Once the pot is at a rapid boil, add the noodles.
Cook the noodles to al’ dente based on the instructions on the back of the package. Drain and set aside.
When the beef tips are tender and the gravy has thickened, divide the pasta between the two plates. Serve the crock pot beef tips over the noodles.
Garish with chopped fresh parsley as desired.
