Crock Pot Chicken & Stuffing Casserole is one of those meals that I find myself going back to time and time again. It is easy to put together, comforting to eat, and requires very little effort in the kitchen.
In fact, I usually make this recipe at least two to three times a month because it is that simple and delicious. It is the kind of dish you can throw in the slow cooker in the morning and have ready to enjoy just a few hours later. When life gets busy, recipes like this become lifesavers.
At its heart, this dish combines chunks of juicy chicken breast with stuffing mix and tender green beans, all wrapped together in a creamy sauce that is smooth and flavorful.

It is a complete meal in one pot, and that is part of its charm. You don’t need to worry about making additional sides unless you want to. The stuffing replaces traditional starches like rice or pasta, while the green beans provide a built-in vegetable that rounds out the meal perfectly.
Why This Meal Is One of My Favorites
Another reason I love making Crock Pot Chicken & Stuffing Casserole is how versatile the recipe is. The basic ingredients remain the same, but there are so many small tweaks you can make depending on what you have on hand.
If you prefer a different vegetable, it is easy to swap the green beans for broccoli, peas, or even carrots. If you like your stuffing on the more savory side, you can add in a few chopped onions or mushrooms.
It is one of those recipes that can be adapted without much effort, and that keeps it from ever feeling repetitive, even if you make it frequently.
This casserole is also a complete meal. Instead of preparing separate sides, you get protein, a starch, and a vegetable all in one dish. For busy nights, that is a huge time saver.

INGREDIENTS
- 1 large chicken breast
- 3 oz. boxed stuffing mix
- 1 teaspoon unsalted butter, melted
- 1 1/4 TBSP. all-purpose flour
- 1/4 cup chicken broth
- 2 TBSP. milk
- 1/4 teaspoon poultry seasoning
- 1/4 cup sour cream
- salt and pepper, to taste
- 4 oz. frozen or fresh green beans
The star of the dish is one large chicken breast. Because the chicken is cut into two-inch cubes before going into the slow cooker, a single breast is enough to provide plenty of bite-sized pieces throughout the casserole. Using chicken breast keeps the recipe lean, but you can also use chicken thighs if you prefer the richer flavor.

The stuffing mix is another key element. A small, 3-ounce box is all you need. You don’t need to prepare the stuffing ahead of time – simply sprinkle the dry mix over the chicken in the crock pot. The stuffing will absorb the sauce and flavors as it cooks, creating the perfect texture.
The creamy sauce is what brings everything together. You can make it from scratch using melted butter, flour, chicken broth, milk, poultry seasoning, and sour cream. Or, if you want to save time, you can use half a can of cream of chicken soup in place of those ingredients. Both versions work well, but the homemade sauce gives you more control over flavor.
Finally, the vegetable. Green beans are my go-to because they cook well in the crock pot and pair nicely with the chicken and stuffing. You can use frozen beans straight from the bag or fresh beans that have been trimmed.
How to Prepare Crock Pot Chicken & Stuffing Casserole
The first step in making Crock Pot Chicken & Stuffing Casserole is to prepare the slow cooker. Spray the inside with non-stick cooking spray or line it with a disposable liner. I prefer using a 2.5-quart slow cooker for this recipe since it is designed for two people. Using a smaller crock pot ensures the food cooks evenly and prevents it from drying out.
Cut the chicken breast into 2-inch cubes and season with salt and pepper. Place the chicken at the bottom of the crock pot. Sprinkle the dry stuffing mix evenly over the chicken.
If you are making the sauce from scratch, whisk together the melted butter and flour until a paste forms. Slowly add chicken broth and milk, whisking constantly to keep it smooth. Stir in the sour cream, poultry seasoning, and a little salt and pepper. Pour this mixture evenly over the stuffing.

Finally, place the green beans on top. Cover the crock pot and cook on HIGH for four hours. Stir once or twice during cooking to help the beans cook evenly. By the time it’s done, the chicken will be tender, the stuffing will be moist, and the beans will be perfectly soft.
Tips for Making the Best Chicken & Stuffing Casserole
One of the best tips for making Crock Pot Chicken & Stuffing Casserole is to avoid overcooking. Even though slow cookers are known for their long cooking times, chicken breast can dry out if left in too long. Four hours on HIGH is the sweet spot for tender chicken that isn’t overdone.
Another tip is to adjust the vegetable depending on your preference. Green beans work well, but peas, corn, or even mixed vegetables can be used for a change of pace. Adding in mushrooms or onions with the stuffing mix can also boost the flavor.
If you prefer a creamier casserole, you can add a little extra sour cream or a splash more chicken broth. If you like your stuffing a little firmer, reduce the amount of liquid slightly. The beauty of this recipe is how forgiving it is – you can customize it easily.
Serving Suggestions for Crock Pot Chicken & Stuffing Casserole
This casserole is a complete meal on its own, but if you want to serve it with something extra, a simple side salad pairs nicely and adds freshness. A slice of crusty bread or a warm dinner roll also makes a great addition, especially for soaking up any creamy sauce left on your plate.
For larger gatherings, you can double the recipe and use a bigger slow cooker. Leftovers store well in the refrigerator for a couple of days and reheat nicely for lunch the next day.

Why Slow Cooker Meals Are Perfect for Two
Recipes like Crock Pot Chicken & Stuffing Casserole are perfect for small households. They require very little hands-on time, and because everything cooks in one pot, cleanup is minimal. Instead of cooking multiple dishes, you get a balanced meal with just a few ingredients.
