Whenever you are craving a comforting and hearty meal, but don’t have a lot of time to spend cooking in the kitchen, make this Crock Pot Sausage Potatoes and Green Beans recipe. Not only is it delicious and satisfying, it takes only 5 minutes to prepare!
This recipe is what is considered a dump and go recipe. Simply cut up the ingredients and ‘dump’ everything into your slow cooker.
Then turn it on and your meal will be ready when you are. And who doesn’t love a meal that practically cooks itself?
Using a crock pot for this dish means you can set it up in the morning and come home to a delicious, ready-to-eat dinner. It’s perfect for busy weekdays or even if you’re just cooking for yourself and want some leftovers for lunch the next day.

Ingredients For Crock Pot Sausage Potatoes and Green Beans Recipe
Sausage: When it comes to sausage, you want something that will bring a lot of flavor to the meal. Smoked sausage and andouille sausage are great options.
For a milder flavor, go with kielbasa. And for those who prefer an even healthier meal opt for sausage made with chicken or turkey. Best of all the sausage doesn’t have to be pre-cooked.
Potatoes: Yukon Gold or red potatoes are your best bet for this recipe. They both have great texture and hold up well in the crock pot without turning mushy. Plus, as the potatoes cook in the crock pot they will absorb the sausage flavors making every bite delicious!
Green Beans: Fresh green beans are ideal for this dish. They add a nice crunch and a vibrant green color that makes the meal look as good as it tastes. However, if you’re in a pinch, canned green beans work just fine – just be sure to drain them well.
Onion: When it comes to what type of onion to use I prefer a yellow onion for this recipe. It has a sweet, mild flavor that compliments the other ingredients without overpowering them. However, if you prefer a slightly sweeter taste, you could use a sweet onion instead.
Seasoning: A mix of Italian seasoning, salt, and pepper is all you need to bring this dish together. The Italian seasoning adds a wonderful blend of herbs, while the salt and pepper can be added to your taste preference. Sometimes I add seasoned salt as well which gives your meal another layer of delicious flavor.
One Final Ingredient – Butter
Right before turning on the crock pot place pats of butter over the sausage, potatoes and green beans. Why? Butter adds a rich, creamy texture that ties all the flavors together.
Although you could skip the butter to make this dish more healthy, it really provides the meal with that feeling of a slow cooked southern meal. It’s that simple touch that makes everything taste just a bit better.
Preparing Your Crock Pot

You can either spray the inside with a non-stick cooking spray or use a crock pot liner. The liner is especially handy because it makes cleaning up a breeze – you can just lift it out and toss it when you’re done.
Easy Dump & Go Meal For Two
Now that you have your crock pot ready, it is time to get your sausage, potatoes and green beans prepared.
1. Pour the chicken broth in the bottom of the crock pot.
2. Then slice or cut your sausage into bite-sized pieces. Try to slice them at an angle to give the sausage pieces more surface area to absorb the seasonings.
2. Cut your potatoes into chunks. However, do not cut them too small, as you want them to hold up during the long cooking process. I typically quarter medium size potatoes which makes them the perfect size to cook in the slow cooker.
3. Trim and halve your green beans if you’re using fresh ones. Or if you are using canned green beans drain them before adding them to the crock pot.
4. Cut the yellow onion into 8 wedges. This will allow the onion to become tender but not get lost in the meal while it cooks.
5. Once your ingredients are prepped, it’s time to layer them in the crock pot.
- Start by placing the cut pieces of sausage in the chicken broth.
- Then add the potatoes on top of the sausage.
- Place the green beans and the onions on top. (I also sometimes add a few cloves of garlic).
- Sprinkle your Italian seasoning, salt (or seasoning salt), and pepper over the top.
- Place the pats of butter over the top.
6. Set your crock pot on low and let it cook on low for about 7-8 hours, or until the potatoes are tender and the sausage is nice and juicy.
How To Serve Crock Pot Sausage Potatoes and Green Beans
When you are ready to eat use a slotted spoon to scoop up the ingredients and place them in a large, shallow bowl or plate. Be sure to get a bit of everything in each serving.
Although this dish is a meal on its own, I like to serve it with some dinner rolls or crusty bread to soak up all those delicious juices that will be in the bottom of your plate.
