If you are looking for a way to make breakfast a little more interesting than serving the typical bacon, eggs, and toast, then you are going to love this French Toast Casserole Recipe. It is one of my favorite breakfast casserole recipes that is designed to serve two people.
All the flavors of traditional French Toast without the need to stand over a stove. Instead, bite size pieces of bread are drizzled with a cinnamon flavor milk and egg batter.
Then a little cinnamon brown sugar coating is sprinkled on top and the casserole is ready to go in the oven. Less than 30 minutes later breakfast is ready!
In the mean time, make a few slices of Air Fryer Bacon and pour yourself a cup of coffee or orange juice. Then once the breakfast casserole comes out of the oven sprinkle the top with confectioners’ sugar and drizzle some maple syrup over the entire dish.
Now breakfast is ready! It is time to sit down and enjoy each other’s company while you have a delicious meal to start your day.
When To Make French Toast Casserole
Although you could make this breakfast casserole any day of the week, there are certain times when it is the preferred breakfast of choice. And for me, it begins as the start of a holiday morning.
1. Christmas Breakfast
When we wake up Christmas morning it is typically just the two of us. Although there will be family to visit throughout the day, we typically spend breakfast alone.
Therefore, instead of standing in the kitchen using several skillets to make eggs, bacon, and hash browns we make French Toast Casserole instead.
Then as the casserole bakes we begin our preparation to celebrate the holiday. We also make this meal on Easter morning as well.
2. Brunch
When looking for a great brunch recipe, look no further. Whether you are heading to a friend’s house or making brunch for family and friends, this casserole deserves a spot at the table.
Because there are several items being served, a smaller casserole is a welcome sight. Best of all, it can be served warm or at room temperature.
And if you need to heat it up a bit, the smaller casserole will fit in the microwave perfectly!
3. Breakfast For Dinner
Who else loves breakfast for dinner? When you get in a rut and are tired of making the same things for dinner, breakfast is a great option.
Better yet, you can set the bread out on the counter in the morning and it will have a chance to dry out a bit. Then by the time that you are ready to make dinner it will be the perfect consistency to absorb the batter.
What Type of Bread To Use For French Toast
However, before you pull that loaf of standard sandwich bread out of the cupboard and begin tearing it into pieces, there is a better alternative when making French Toast Casserole.
Although technically you could use any variety of bread, using the thin slices of white bread will make your casserole a less than desirable meal. The bread will soak through and flatten.
Therefore, if you would like a hearty dish where the bread is the star of the show, use a thicker, more dense variety of bread.
Brioche bread is the preferred bread among many chefs. It is sweeter than most yeast breads and has a thick and dense structure.
However it also has a strong egg and butter flavor that pairs perfectly with French toast casserole batter.
Other optimal bread choices include Challah and French bread as they both have great taste and texture that absorbs the batter and crisps up nicely when baked.
Although I have to admit, I rarely have any of those varieties in my cupboard. Therefore, instead I prefer to use Texas Toast Bread.
I keep a loaf in the freezer so that I can make Four Cheese Garlic Bread whenever I make a pasta dish like Baked Spaghetti Casserole. Then I also use it to make French Toast Casserole.
Because the bread is frozen, once thawed, it resembles day old bread. Which is why it is perfect to use in this recipe!
French Toast Casserole For Two

INGREDIENTS
- 3-4 pieces Texas toast bread, cut into cubes
- 1/4 cup butter
- 1/2 cup packed brown sugar
- 3 eggs
- 1 cup milk
- 1 teaspoon vanilla extract
- 1 teaspoons cinnamon, divided
- 1 1/2 teaspoons brown sugar, for topping
Optional Ingredients For Serving
- Maple Syrup
- Powdered sugar
INSTRUCTIONS
When you are ready to make your French Toast Casserole preheat the oven to 425°F (220°C). Then butter a small, 1 quart baking dish and set aside.
In a small sauce pan, melt the butter over medium heat. Once the butter has melted, add the 1/2 cup of brown sugar and stir until the sugar is dissolved.
Pour the mixture into the bottom of the prepared pan and spread it out evenly over the bottom surface.
*Or place the butter in the baking dish until it is fully melted. Then stir in the brown sugar until it is no longer visible. (One less dish to wash!)
Add the cut bread cubes into the baking dish in an even layer over top of the butter and brown sugar mixture. It is okay if the cubes are slightly mounded on top of each other. Set the dish aside.
In a medium mixing bowl, add the eggs, milk, vanilla, and 1/2 teaspoon of cinnamon. Reserve the other half of cinnamon for later.
Whisk the batter until the eggs are incorporated and there are no strands of raw egg visible. Then pour this egg mixture over the top of bread cubes, being sure that the bread cubes on top get wet from the mixture.
Sprinkle the top of the bread cubes with remaining 1 teaspoon of cinnamon and 1 tablespoon of brown sugar.
Bake Time Required
Place the casserole in the preheated oven and bake for 25-30 minutes or until the top is golden brown. Then remove the pan from the oven and sprinkle the top with powdered sugar if desired.
Serve warm with maple syrup and any other toppings as desired.
