Pecan Pie For Two – The Perfect Small-Batch Dessert Recipe

When it comes to Thanksgiving desserts, it’s hard to beat a slice of warm, gooey pecan pie. But if you’re cooking for just one or two people this year, making a full-sized pie can simply be too much.

That’s exactly why this recipe is such a game-changer. It delivers all the buttery, nutty flavor of a traditional pecan pie, but in a smaller size that’s just right just for about any occasion.

This easy dessert comes together with basic pantry ingredients and a simple homemade crust that bakes up golden and crisp. Whether you’re hosting your own Thanksgiving dinner or simply craving something sweet after a fall meal, Pecan Pie for Two is the perfect way to enjoy a classic without the leftovers.

Why You’ll Love This Pecan Pie For Two

Unlike traditional pies that require a full pastry crust and a deep dish, this version is designed to be simple and small-batch. You’ll use a small oval or a 5-inch square baking dish, which keeps the portion size ideal for couples or small households.

It has a buttery shortbread-style crust that’s pressed directly into the pan – no rolling pin needed. The filling features the same familiar ingredients that make pecan pie irresistible: corn syrup, sugar, butter, vanilla, and toasted pecans. The result is a sweet and slightly caramelized filling with crunchy pecans in every bite.

Even better, this pie requires minimal prep and bakes in under an hour. And since it takes some time to cool, you can make it even ahead of time which can be important on busy holidays like Thanksgiving.

Once you are ready to serve, slice and add a dollop of whipped cream or a scoop of vanilla ice cream to make it even more delicious!

INSTRUCTIONS

1. Preheat the oven.
Set your oven to 350°F (175°C) and lightly grease a small oval or a 5-inch square baking dish with butter or nonstick spray.

2. Make the crust.
In a mixing bowl, combine the softened butter and sugar. Use a hand mixer or spoon to stir until smooth and creamy. Add the flour, cornstarch, and salt, mixing until the dough forms. It should hold together but not be sticky.

3. Bake the pecan pie crust.
Press the dough evenly into the bottom of your prepared dish. Bake for 12–15 minutes, or until lightly golden around the edges. Set aside to cool completely before adding the filling.

4. Prepare the filling.
In another bowl, whisk together the corn syrup, egg, sugar, salt, melted butter, and vanilla extract. Once well blended, stir in the pecans.

5. Bake the pie.
Pour the pecan mixture over the cooled crust, spreading it evenly. Place the dish back in the oven and bake for 30–35 minutes, or until the filling is firm around the edges but still slightly soft in the center.

6. Cool completely.
Let the pie cool on a wire rack for at least 2 hours. This allows the filling to set properly before slicing.

7. Serve and enjoy.
Cut into squares and then serve as is or with whipped cream or ice cream. You can even warm it briefly in the microwave for a few seconds before serving if you prefer it slightly warm.

Tips For Making The Perfect Pecan Pie For Two

  • Toast the pecans first. For even more flavor, toast the pecans in a dry skillet for 4–5 minutes before adding them to the filling.
  • Don’t skip cooling time. The filling needs time to firm up after baking. Cutting it too soon can make the filling runny.
  • Use pure vanilla extract. It enhances the caramel-like flavor of the filling.
  • Add a touch of bourbon or maple syrup. If you want a twist, replace one teaspoon of the corn syrup with either for extra depth.
  • Try a different pan. If you don’t have a small oval or a 5-inch baking dish, two ramekins will also work well.
