When it comes to making a Christmas dinner for two, it doesn’t get much easier than this sheet pan recipe. Slices of ham and pineapple that have a drizzle of glaze poured over the top and are cooked alongside fresh green beans and potatoes for a festive holiday meal.
Best of all, it is cooked entirely on one sheet pan. Simply prepare the ingredients and them to a rimmed baking sheet. It is a great way to make a delicious meal without a lot of clean up afterwards.
Although not a traditional family style dinner, it is a simple way to get dinner for two on the table without a lot of work. And with less time required in the kitchen, you have more time to enjoy the company of each other or to watch your favorite holiday movie.
Why Make A Sheet Pan Dinner
It’s easy. Sheet pan meals are known for being simple and straightforward to prepare. This is because all of the ingredients are cooked together on one baking sheet, so there’s no need to worry about juggling multiple pots and pans. This is especially helpful around the holidays when your time is limited.
It’s mess-free. Since everything is cooked on one sheet pan, there’s very little mess to clean up afterward. There will be even less clean up if you line the sheet pan with parchment paper or a silicone baking mat.
It’s versatile. You can customize a sheet pan meal to fit your dietary needs and preferences. For example, you can use different types of meat, vegetables, and starches to what you prefer. You can also easily adjust the type of seasonings to your liking.
Ingredients Required
1. Ham
In order to get all of the items done at the same time it is best to use pre-cooked, thin ham slices. Then all that you have to do is to reheat the meat and it is ready to enjoy.
Although you could purchase a single ham steak, for this recipe I use slices of ham that I pull off a small 1.5 pound pre-packaged ham. You can find these smaller size hams in the refrigerated meat aisle at the grocery store next to ham steaks.
Then I either freeze the remaining ham slices for use throughout the year, or use them to make ‘leftover’ ham recipes such as Ham and Potato Casserole or Ham and Bean Soup.
2. Potatoes
To make things easy on yourself, use mini potatoes in this Christmas dinner sheet pan recipe. Then all you have to do is slice each one in half before you season them.
However, because I typically have Yukon Gold potatoes in my house during the holiday season, that is the variety that I use. Although you will need to cut them into small, bite size sections in order for them to cook properly.
You can also use Russet or Idaho potatoes if you prefer. But again, be sure to cut them in 1 inch cubes so that they can become nice and tender.
3. Green Beans
Fresh green beans can easily be found around the holiday season, as it is the side vegetable of choice for many. Just be sure to pick out firm green beans without soft spots or blemishes.
Then wash and trim off the edges. You can leave them whole or cut them in half before they go on the sheet pan.
4. Ham Glaze
No serving of ham at Christmas would be complete without it being drizzled in glaze. However to keep things simple we are using the simple combination of pineapple juice and brown sugar.
The glaze adds just enough sweetness to balance out the saltiness of the ham slices. Not to mention, it is quick and easy to make.
5. Pineapple Rings
To flavor the ham even more, pineapple rings are placed between each slice of ham when it goes into the oven. Not only does the pineapple juice infuse into the ham, the pineapple rings themselves becomes slightly caramelized, providing another amazing flavor for your Christmas dinner.
6. Seasonings
Now it is time to add a little flavor for both the potatoes and green beans. However, for this recipe we are keeping it simple and using butter, garlic, salt and pepper.
Although feel free to add your favorite vegetables seasonings to make the veggies taste just how you prefer. Some common seasoning additions include: Italian seasoning, onion powder, paprika, rosemary and thyme.
Sheet Pan Christmas Dinner Recipe For Two

INGREDIENTS
- 1 1/2 cups mini potatoes, cut in half
- 1 1/4 cups fresh green beans, trimmed
- 4 slices of ham, 1/4-1/2 inch thickness
- 1 tablespoon light butter, divided
- 1 teaspoon minced garlic, divided
- Salt & pepper, to taste
- 1 1/2 tablespoon pineapple juice
- 1/2 tablespoon light brown sugar, packed
- 4 pineapple rings
INSTRUCTIONS – Sheet Pan Christmas Dinner For Two
Preheat oven to 350°F (175°C) Spray a medium size baking sheet with non-stick cooking spray. Set aside.
Wash and cut the mini potatoes in half. Place the potatoes in a medium size bowl and add salt and pepper to taste. Set aside.
Melt 1/2 tablespoon of butter in the microwave or in a pot on the stove placed over medium heat. Once the butter melts drizzle it over the potatoes.
Add the 1/2 teaspoon of the minced garlic to the bowl with the potatoes and toss well. Place the potatoes on 1/3 of the baking sheet, being sure not to overlap the potatoes.
Pre-Bake The Potatoes
Place the potatoes in the preheated oven and bake for 25 minutes.
In the same bowl that you prepared the potatoes add the washed and trimmed green beans. Season with salt and pepper to taste.
Melt the remaining 1 1/2 teaspoons of butter and drizzle it over the green beans. Then add the final 1/2 teaspoon of minced garlic and toss well to coat. Set aside.
In a small bowl add the pineapple juice and brown sugar. Mix to combine. Set aside.
Add The Green Beans & Ham
Remove the potatoes from the oven and then add the green beans to the center of the baking sheet.
Working one at a time, place a piece of ham on the remaining 1/3 section of the baking sheet and top it with a pineapple slice. Continue to put all 4 slices on the pan, topping each one with a pineapple slice. Drizzle the top of the ham and pineapple rings with the brown sugar pineapple juice mixture.
Place the baking sheet back in the oven and bake for an additional 20-25 minutes or until the potatoes are fork tender.
Remove the pan from the oven and serve.
