Small Batch Fudge Recipe – The Perfect Amount For Two People

This small batch fudge recipe makes the perfect amount when you want just enough fudge for two people. Although, if you are a chocolate lover you may be wondering why you would want to make such a small batch recipe.

Believe it or not, there are times when it truly comes in handy not to have a lot of leftover sweets in the house. For instance, I make it on special occasions when I need an easy to make chocolate dessert.

I also make it around the holidays, either to add a little variety to our cookie tray or to gift it to one of my favorite couples, teacher or service worker.

Not to mention that it makes the perfect Valentine’s Day treat or anniversary dessert, especially when you serve it with a few chocolate covered strawberries.

But what I really like about this recipe is that it requires only 3 ingredients (4 if you include walnuts) and it can be made in less than 2 minutes! You read that right! It literally takes only a couple of minutes to prepare.

Although you will have to wait until the fudge sets up before cutting and serving. But let me tell you, the wait is well worth it!

Small Batch Fudge Recipe

INGREDIENTS

  • 1 cup semi sweet chocolate chips or
  • 1/3 cup + 1 tablespoon sweetened condensed milk
  • ¼ teaspoon vanilla extract

Optional:

  • ¼ cup chopped walnuts

INSTRUCTIONS

The first step in making this small batch fudge recipe is to find a small baking dish or glass storage container where the fudge can set up when it cools.

You will want to find a fairly small dish so that the fudge doesn’t spread out so much and be too thin when you cut it into pieces.

I used a small rectangle pyrex glass dish and it worked out perfect. Once you have selected the right size container, line it with aluminum foil or parchment paper.

You can make this easy fudge recipe using the microwave or melting the ingredients on the stove top.

Make sure to cut off a large enough piece that the edges extends over the sides of the pan. If using foil spray it liberally with non-stick cooking spray. Set the pan aside while you make your fudge.

Easy Microwave Fudge Instructions

In a small microwaveable safe bowl or 2 cup glass measuring cup, add the pieces of chocolate and sweetened condensed milk.  Microwave the mixture on high power for 30 seconds.

Remove the container from the microwave and stir until the chocolate is completely melted. If it is not fully melted, microwave in 10 second increments until there are no longer chunks of chocolate when stirred.

Then stir in the pure vanilla extract and walnuts (if using).

After the chocolate chips or melting wafers are completely melted, stir in the vanilla and walnuts, if using.

Once the batter is well incorporated spread the mixture into the prepared pan. Then cover and refrigerate for at least 2 hours or until solid and firm.

Stove Top Instructions

If you prefer to make this small batch fudge recipe on the stove top, it is easy to do. Simply add your ingredients (minus the nuts if using) to a small saucepan and place over medium heat.

Stir continuously until the chocolate is just melted and the consistency is smooth. It will be thick, but there should be no visible chunks of chocolate in the mixture.

Stir in the walnuts (if using).

Quickly spread the fudge into the prepared pan. *Hint – If the top looks too rough (it should not be completely uniform), wet your fingers with water and smooth out the top.

Place the container in the refrigerator and let it cool for 2 hours.

Cut The Fudge

To remove the small batch fudge from the pan lift up on the edges of the foil. Then carefully peel the foil off of the bottom and sides of the fudge.

Place the fudge on a cutting board and use a sharp knife to cut it into squares. Depending on the size of the container and how small you want your pieces, you should get 6-12 pieces.

Store any leftovers in a sealed container at room temperature. You can store the fudge in the refrigerator, however, as the chocolate warms to room temperature, condensation will develop on the surface.

Therefore, if I do store it in the refrigerator, I will serve cold, as soon as it is removed from the fridge.

After everything is combined, pour the fudge into the prepared pan. Then cover and refrigerate for a couple of hours before cutting.

Ingredients

  1. Line a small baking dish or glass storage container with aluminum foil, making sure to extend the foil over edges of pan. Spray liberally with non-stick cooking spray. Set aside.
  2. In a medium size, microwaveable safe bowl add the chocolate chips and sweetened condensed milk.  Microwave on high power for 30 seconds.

  3. Remove bowl from microwave and stir until chocolate chips are completely melted. If they are not fully melted, microwave in 10 second increments until the chocolate chips are melted.

  4. Stir in vanilla and walnuts (if using).

  5. Spread the mixture into the prepared pan.  Cover and refrigerate for 1-1 ½ hours or until solid and firm.

  6. Using the foil ends, lift the fudge from the pan and carefully peel the foil off of the fudge. Use a sharp knife to cut the fudge into squares.

    Store any leftovers in a sealed container at room temperature or in the refrigerator.
