Snickers Cheesecake Bars – An Easy & Delicious Dessert Worth Sharing!

Whenever you need a delicious dessert recipe to celebrate something special you have to make these Snickers Cheesecake Bars. It all starts with a creamy filling with chunks of Snickers candy bars scattered throughout.

Then if that wasn’t enough, it is nestled on top of a chocolate crust and topped with mini chocolate chips. With just one bite you will have found your new favorite dessert!

The best part of all, it is easy to make and requires only 30 minutes to bake! Once you let it cool, slice the cheesecake into bars and you have a dessert worthy of sharing.

Snickers Cheesecake Bars Recipe

INGREDIENTS

  • 15 Oreos, crushed
  • Unsalted butter, melted
  • Cream cheese, softened to room temperature
  • Granulated sugar
  • Egg
  • Sour cream
  • Pure Vanilla extract
  • Pinch of salt
  • Snicker bars, chopped (about 10 fun-size bars or 2-3 standard size bars)
  • Mini chocolate chips
  • Caramel sauce for drizzling, optional

INSTRUCTIONS

The first, and most crucial step in making this recipe is to make sure that the cream cheese is at room temperature. You can not make good cheesecake with cream cheese that is cold from being refrigerated. Therefore, plan to set the cream cheese out on the counter at least 1 hour prior to beginning this recipe.

While the cream cheese is warming up, crush the Oreo cookies for the crust and chop the Snickers bars for the filling.

Crush the Cookies & Chop The Candy Bars

Although you can now purchase chocolate cookie crumbs I find it best to do it myself. This way I can taste a couple of cookies to make sure that they are adequate for the crust. 😊

Place the cookies in a large resealable plastic bag. Then seal the bag and use a rolling pin, flat meat mallet, or something similar to turn the cookies into crumbs.

You can also place the cookies in a food processor to make the crumbs. However, the cream filling often gets stuck on the edge the blades and requires frequent stopping to scrape them off.

Therefore, I find it easier to crush them manually instead. In addition, this process is also a great stress reliever.

Continue to pound the cookies until 80% of them are made into fine crumbs. You can have some larger pieces for the Snickers Cheesecake bars crust, but you want them no bigger than a small pencil eraser. Set the crumbs aside and then chop the Snickers candy bars.

Take 10 Fun-Size candy bars and chop them into small pieces. Do this by cutting the bars in one direction, and then cut the pieces in the other direction.

Although the exact size of the chunks really don’t matter, the smaller the pieces the better for the ease of eating. Set the chopped pieces aside while you prepare the oven and baking pan.

Preheat the Oven & Prepare The Pan

Now preheat the oven to 350°F (177°C). Then line an 8 x 8-inch baking pan with aluminum foil or parchment paper with two edges hanging over the sides. This will make it easy to remove the bars after they are cooked and cooled.

Lightly grease the foil with non-stick cooking spray and set aside. It is now time to make the chocolate cookie crust.

Once you have crushed the chocolate cookies, mix them with melted butter and press them into an 8×8 foil lined pan to make the crust.

Place the cookie crumbs in a medium size bowl. Then add the melted butter and stir until the crumbs are evenly moistened.

Press the mixture tightly into the bottom of the prepared pan with the back of a silicone spatula. You may need to spray the back of the spatula with non-stick cooking spray to prevent the crumbs from sticking to it.

Once the Snickers Cheesecake Bars crust is nice and firm, set the pan aside. It is now time to make the cheesecake filling.

Cheesecake Filling

In a large bowl add the softened cream cheese and sugar. Using a handheld electric mixer, or a stand mixer fitted with the paddle blade, beat until the mixture is light and fluffy.

Do not rush this process! I used to make the mistake of stopping the mixer when the sugar was no longer visible. Continue to mix until the cream cheese becomes light and fluffy. This process should take approximately 3-4 minutes.

Once the cream cheese and sugar mixture is nice and fluffy, scrape the sides of the bowl and add the egg. With the mixer on a slow speed, mix until the egg is just combined.

You don’t want to over mix the egg or your Snickers Cheesecake Bars may turn out lumpy once baked. Now add the sour cream, pure vanilla extract and a small pinch of salt. Now mix one more time, just until combined.

Use a silicone spatula to fold the chopped Snickers bars into the filling. Then carefully spread the batter evenly on top of the crust.

You don’t want to press down too hard, otherwise the crust may begin to crumble. Once the cheesecake filling is nice and even, sprinkle the mini chocolate chips on top.

Bake Time

Place the dish in the oven and bake for 30 minutes or until the cheesecake is set throughout. If the center, bigger than a dime in size, still looks like uncooked batter and jiggles a lot, continue to bake.

It is normal for the entire cheesecake to wobble a little when the pan is shaken. The bars are cooked through and will set completely once the Snickers Cheesecake Bars are cooled.

After you take the cheesecake bars out of the oven, let it cool to room temperature before placing it in the refrigerator to set.

Remove the baking dish from the oven and set the pan on a wire cooling rack. Let the bars cool completely and then place the entire pan in the refrigerator until the bars are completely set and chilled.

Once you are ready to serve, lift the bars out of the pan using the overhang of the aluminum foil or parchment paper. Then slice the cheesecake bars into squares and serve chilled.

Optional: If you want to make an even bigger impression, drizzle caramel sauce over top of the bars. The extra flavor on tops takes this already delicious dessert recipe to a new level!

Store the remaining bars in the refrigerator in a covered container.

Ingredients

  • 1 1/2 cups Oreo cookie crumbs, about 15 Oreos, crushed
  • 3 tablespoons unsalted butter, melted
  • Cheesecake:
  • 1 1/2 packages (12-ounces total) cream cheese, softened to room temperature
  • 1/4 cup granulated sugar
  • 1 large egg
  • 1/4 cup sour cream
  • 1/2 teaspoon vanilla extract
  • Pinch of salt
  • 5 ounces Snicker bars, chopped (about 10 fun-size bars or 2-3 standard size bars
  • 1/8-1/4 cup mini chocolate chips
  • Caramel sauce for drizzling, optional

Instructions

  1. Preheat the oven to 350°F (177°C). Line an 8 x 8-inch pan with aluminum foil or parchment paper with the edges hanging over the sides. Lightly grease the foil with non-stick cooking spray. Set aside.

  3. In a large bowl add the softened cream cheese and sugar and beat using a handheld electric mixer or in the bowl of a stand mixer fitted with the paddle blade until light and fluffy, approximately 3-4 minutes.

  4. Add the egg and mix until just combined, being sure to scrape down the sides of the bowl as needed. Add the sour cream, vanilla extract and a small pinch of salt. Mix just until combined.

  5. Use a silicone spatula to fold in the chopped Snickers bars. Then spread the batter evenly on top of the crust. Now sprinkle the mini chocolate chips on top.

  6. Place the dish in the oven and bake for 30 minutes or until the cheesecake is set throughout. If the center, bigger than a dime in size, still wobbles when the pan is shaken, continue to bake for a few more minutes.

  7. Remove the dish from the oven and let the bars cool completely. Then place in the refrigerator until completely set and chilled.

  8. Cut into squares and serve chilled.
