Strawberry Rhubarb Crisp Recipe For Two

If you are looking for a quick and easy dessert recipe that uses fresh, seasonal ingredients you are going to love this Strawberry Rhubarb Crisp recipe. Fresh strawberries are mixed with tangy bits of rhubarb which creates the perfectly balanced fruit filling.

Then add a simple homemade crisp topping and put it in the oven until it turns golden brown. The crunchy topping is the perfect contrast to the soft, juicy fruit filling below.

To make it even more delicious top it with a scoop of vanilla ice cream or whipped topping for a classic summertime dessert. However, before you mix the ingredients together, you must first safely prepare the rhubarb.

How To Safely Prepare Rhubarb

Preparing rhubarb involves a few key steps to ensure that it is not only delicious but safe to eat. First, be sure to choose rhubarb stalks that are crisp and firm with a bright red color. Avoid stalks that are limp or are discolored.

Then cut off and discard the rhubarb leaves. They are toxic and should never be eaten.

Next, wash the stalks under cold running water to remove any dirt or debris. Then trim off the ends of the stalk as they can be tough and dry.

Now you must decide whether or not you need to peel the rhubarb. If using young and tender rhubarb stalks they most likely don’t need to be peeled.

Before adding the rhubarb to the baking dish, be sure to prepare it so that it is both delicious and safe to eat.

However, older stalks can have a tough, fibrous outer layer that might be worth peeling. If so use a vegetable peeler or small, paring knife to remove any stringy fibers.

Now all that is left to do is to cut the rhubarb into 1/2 inch pieces and finish making your Strawberry Rhubarb Crisp dessert.

The Best Crisp Topping

Once the fruit filling is made it is time to add the crisp topping. Just like when making my Summertime Apple Crisp Recipe, this topping is made with 6 basic ingredients:

  • 1/4 cup brown sugar
  • 1/4 cup flour
  • 1/4 cup old fashioned oats
  • 1/4 cup graham cracker crumbs
  • 1/2 tsp cinnamon
  • 2 Tbsp butter

This combination creates a sweet and caramelized, crunchy topping with the slightly chewy texture. It provides the ideal contrast to the soft, juicy fruit below.

Best of all it is easy to make. Simply add the ingredients into a large shallow dish. Then use a pastry cutter, fork, or your hands to cut in the butter until small pebbles form.

Then sprinkle the topping over the fruit filling and your dessert is ready to go into the oven!

How To Serve Strawberry Rhubarb Crisp

Although you may want to immediately take a bite as soon as it comes out of the oven, it is best to allow the crisp to cool for about 15-20 minutes after baking. This helps it set, making it easier to serve without falling apart, and ensures that it’s warm but not too hot to eat.

For best flavor and texture serve the crisp when it is still lukewarm. The topping will be crispy, and the fruit filling will be set yet slightly syrupy.

However, you can also make the crisp ahead and serve it at room temperature. When you are ready to serve use a large spoon or a spatula to scoop out your portions.

Now it is time to decide whether you want to eat it as is, or add a topping (or two). Below are some of my favorite toppings and garnishes that I love to serve with this dessert.

Optional Toppings:

Vanilla Ice Cream: A scoop of vanilla ice cream on top of warm strawberry rhubarb crisp is a classic pairing. The cold, creamy ice cream melts slightly into the warm crisp which then creates a delicious syrup at the bottom of the dish.

Whipped Cream: Freshly whipped cream adds a light, airy complement to the rich, fruity dessert.

Custard or Cream: Pouring a little custard or cream over the top can add a rich, velvety texture to the dessert.

Yogurt: For a lighter option, a dollop of Greek yogurt can add creaminess with a slight tang that compliments the tartness of the rhubarb.

Fresh Mint: A sprig of fresh mint adds a pop of color and a refreshing light taste to the dessert. It helps to balance out the sweetness of the Strawberry Rhubarb Crisp filling.

INGREDIENTS

  • 2 cups rhubarb, leaves removed, rinsed, peeled and diced
  • 1 cup strawberries, hulled and sliced
  • 1/4 cup granulated white sugar
  • 1 tsp lemon juice
  • 1/2 tsp lemon zest

Topping:

  • 1/4 cup brown sugar
  • 1/4 cup flour
  • 1/4 cup old fashioned oats
  • 1/4 cup graham cracker crumbs
  • 1/2 tsp cinnamon
  • 2 Tbsp butter

INSTRUCTIONS

Preheat oven to 375°F (190°C). Then spray a small 3 cup baking dish with non-stick spray.

In a medium bowl add the diced rhubarb, strawberries, sugar, lemon juice, lemon zest and toss to combine. Pour the mixture into the prepared baking dish and then smooth out the top and set aside.

Add the topping ingredients into a small, shallow bowl. Use a pastry blender, a fork, or your hands to mix until it resembles pea size crumbles.

Sprinkle the Strawberry Rhubarb Crisp topping over top of rhubarb and strawberry mixture. Then place the baking dish in the oven and bake for 25-30 minutes or until topping is golden brown and edges are hot and bubbly.

Remove the dish from the oven and let it sit for 10-15 minutes before serving.
