What You Will Need To Make Sweet Potato Sausage Hash
Equipment

*Although you could technically make this a one skillet meal, this recipe comes together much quicker if you boil the diced sweet potatoes before adding them to the skillet. This will allow the sweet potatoes to soften a bit, yet still have time to caramelize, giving them great flavor.
Ingredients
Sweet Potato
Instead of going with traditional breakfast potatoes, we are using a sweet potato instead. Not only are they plentiful this time of the year, they are also more nutritious than white potatoes. You will need 1 medium size sweet potato for this sausage hash recipe.
White Vinegar
You may be shocked to find vinegar in a breakfast recipe. However distilled white vinegar plays an important roll in making sure the sweet potatoes turn out perfect.
Add a little bit of vinegar to the pot of water and it will cause the potatoes to form a thin exterior crust. This will then help them retaining their shape even once they become soft and tender.
Salt & Pepper
When boiling any variety of potato it is important to salt the water. This will help season the potatoes as they cook. Then season the potatoes with additional salt and ground black pepper to taste.
Ground Sausage
The meat in this breakfast has comes from ground sausage. You can use your favorite pork, turkey or chicken sausage in this recipe. You will only need 1/2 pound, so be sure to save the other half to make Sausage Pancake Muffins.
Vegetables
You can add just about any vegetable to a breakfast hash recipe. However to keep things quick and easy, this recipe includes a red bell pepper and a green onion.
But feel free to use a green pepper, yellow onion or add mushrooms to make your breakfast exactly how you prefer.
Eggs
Although you could serve the sweet potato sausage hash as is, there is just something special about adding two eggs on top. Simply nestle the eggs in the potato mixture and put it in the oven to bake.
Depending on how you like your eggs, it will take anywhere from 10-18 minutes.

Steps To Make Sweet Potato Sausage Hash
1. Boil The Potatoes
As mentioned above, boiling the diced potatoes will make this breakfast recipe come together much quicker than if you pan fried them. Although first you must peel and cut the potatoes into cubes.
In order to do this easily, you must use a sharp knife to cut through the flesh of the raw potato. They are extremely firm so use caution when doing so.
Once they are cut, add them to the pot with the water and vinegar and bring them to a boil. Let them simmer for 5 minutes, or just until fork tender.
2. Cook The Sausage
While the potatoes are boiling, brown the sausage in an oven safe skillet until no longer pink and cooked through. Then transfer the sausage to a bowl and set aside.
3. Saute The Peppers
In the same skillet as you cooked the sausage add a little olive oil and saute the peppers until tender.
4. Add The Potatoes To The Skillet
Once the potatoes are just fork tender, drain them and then add them to the skillet with the peppers. Continue to brown the sweet potatoes so that they begin to caramelize.
5. Bring Everything Together
Now it is time to make the sweet potato sausage hash come together. Do this by adding the sausage and half of the green onion to the skillet.
Then make two nest areas and place a cracked egg in each area. Now transfer the skillet to the preheated oven. Let the eggs bake until they are done to your liking.

INGREDIENTS
- 1 medium sweet potato, peeled and cut into 1 inch cubes
- 1 teaspoon white wine vinegar
- 1 teaspoon kosher salt, divided
- 1/2 pound ground pork sausage
- 1/2 tablespoon olive oil
- 1 red bell pepper, diced
- 1 green onion chopped, divided
- ground black pepper, to taste
- 2 large eggs
- hot sauce or Sriracha sauce, to taste (optional)
INSTRUCTIONS
Preheat the oven to 400°F (200°C).
Place the peeled and cubed potatoes in a medium saucepan. Cover the potatoes with cold water and then add the vinegar and 1/2 teaspoon salt. Bring the pot to a boil, lower the heat, then simmer for 5-8 minutes. The potatoes should be just fork tender but not fall apart tender. Drain and set aside.
While the water heats up for the potatoes, place a large oven-safe skillet over medium heat. Add the ground pork sausage to the skillet and sauté for 6 to 8 minutes, breaking the meat into small pieces, until lightly browned and cooked through. Transfer the cooked pork sausage to a plate.
Add the olive oil to the skillet and increase the heat to medium high. Once the oil is hot add the diced bell peppers to the pan and saute for 4 minutes or until they begin to soften.
Add the drained sweet potatoes to the pan with the peppers. Cook for 6 to 8 minutes, gently turning until the sweet potatoes are lightly browned, adding more oil if needed.
Place the sausage back into the pan. Add half of the green onions to the pan and season with ground black pepper and the remaining salt. *Add the hot sauce/Sriracha sauce here if using. Stir and continue to cook for 2 minutes.
Add The Eggs
Create 2 wells in the hash for the eggs. Crack one egg into a small bowl, then carefully pour it into one of the wells. Repeat with the remaining egg.
Transfer the skillet to the oven and bake until the eggs are done to your preferred doneness. (approximately 10 minutes for eggs over easy, 13 minutes for over medium, 18 minutes for eggs over hard).
Remove the pan from the oven and sprinkle the top with the remaining green onions.
Serve immediately.
