It is the perfect Fall dessert recipe for two when you don’t want to spend a lot of time in the kitchen. Simply mix the ingredients and divide it between two coffee mugs and in under 2 minutes you will be taking a bite into a warm, moist cake.

Apple Pie Mug Cake Recipe

INGREDIENTS
- 4 tablespoon butter, melted & cooled a bit
- 1/2 cup fresh grated apple
- 1 teaspoon lemon juice
- 1 1/2 teaspoons pure vanilla extract
- 1/4 cup light brown sugar, packed
- 1/2 cup milk, room temperature
- 1 cup all-purpose flour
- 1 teaspoon baking powder
- 1 teaspoon apple pie spice
*The ingredients listed above are enough to make two mug cakes. Divide the ingredients evenly and you will have two individual cakes.
Although it is easy to divide the ingredients in half to make a single apple pie mug cake, below I have listed out the specific ingredients for one serving. Because let’s be honest, sometimes we don’t want the hassle of doing math, even if it is easy!
INSTRUCTIONS
Before making this recipe you must decide if you want to mix the ingredients in a separate bowl and then pour it into the two cups or divide the ingredients and make the batter directly in the coffee mugs.
It might be easier to mix the ingredients in a bowl, but if you don’t want to wash an extra dish, then simply divide the ingredients evenly between two coffee mugs.
I will give the instructions based on making the apple pie mug cake directly in each coffee mug. However, feel free to make everything in one bowl and before placing the dessert in the microwave to cook, divide the batter between the two cups.
Start by evenly dividing the butter between the two mugs. Then place the mugs in the microwave and heat for 30-60 seconds or until just melted.
Let the butter cool while you grate the apple. Use a box grater or a mandoline slicer to grate approximately 1/2 of a medium size apple.
Once the butter is no longer scorching hot, divide the grated apple, lemon juice and vanilla extract evenly into each cup and stir until well combined.
Next divide the brown sugar and milk evenly between the two mugs and stir. Then divide the flour, baking powder and apple spice into two even portions.
Add each portion to the two mugs and mix until combined. Some residual lumps in the batter are okay.
Cook Time Required
Place the filled mugs in the microwave and heat on High power for 1 minute. Check for doneness and continue to heat at 15 second intervals until the cake is set in the middle.
*The cake will look moist on top but the batter should not jiggle. Remove the mugs from the oven and serve warm.

Therefore, if you want to peel the apple, peel only half. Then use the other half as your handle to grate the amount that you need.
3. I don’t have apple pie spice. What can I use instead?
Apple pie spice is a combination of cinnamon, nutmeg and allspice. However, the majority of the spice is cinnamon.
Therefore, if you don’t have apple pie spice in your spice cabinet, simply use cinnamon. Although the flavor wont be as complex, it will still give you that iconic apple pie flavor.
4. How do I know when the Apple Pie Mug Cake is cooked long enough?
Because all make and models of microwaves cook at different rates, you will need to check for doneness starting at the 1 minute mark. The cake is done when the top is set and the sides begin to pull away from the mug slightly.
However, because it is being cooked in a microwave the top of the cake will look moist. I have a 1000 watt microwave and my cake was cooked perfectly after a total of 1 minute and 30 seconds.
5. Can I make this ahead of time?
Because all mug cakes comes together so quickly (including this delicious Coffee Mug Cake recipe) rarely should you ever have to make it ahead of time. However, if you do, go ahead and prepare the batter.
Then cover the mug and place it in the refrigerator. When you are ready to cook the apple pie mug cake, take it out of the refrigerator so that it can come to room temperature.
It is a great idea to pull it out of the refrigerator right before you eat dinner. Then when dinner is over and it is time for dessert, the batter will have warmed up enough so that you can put it in the microwave to cook.
