You will only need 1/2 of a can so be sure to save the other half to make Chicken and Zucchini Casserole or Easy Chicken Noodle Casserole. However, if you prefer you can make homemade cream of chicken soup and use it in this recipe.
  • Cottage Cheese: This might surprise you, but cottage cheese adds to the creaminess of the sauce. Just be sure to use small curd cottage cheese as it will melt well when baked.
  • Sour Cream: Use any type you like—regular, low-fat, or fat-free.
  • Cream Cheese: Be sure to use room temperature cream cheese so it blends smoothly with the other ingredients. If you’re in a hurry, microwave it for a few seconds to soften it up quickly.
  • Seasonings: Creole seasoning adds a bit of spice (adjust to taste), along with onion powder and garlic powder.

Main Ingredients:

  • Chicken: You will need 1 1/2 cups of cooked, shredded or diced chicken. A store-bought rotisserie chicken makes this step super easy, but you can cook your own if you prefer.
  • Potatoes: Frozen cubed potatoes are a great time-saver. If they’re clumped together, just break them apart before mixing them into your Chicken and Potato Casserole.
  • Corn: Use fresh, frozen, or canned corn—whatever you have on hand works fine.
  • Parsley: Fresh parsley adds a bit of color and flavor, but you can use dried parsley if that’s what you have.

INGREDIENTS:

  • 1/2 can cream of chicken soup
  • 1/4 cup cottage cheese
  • 1/4 cup sour cream
  • 2 ounces cream cheese, at room temperature
  • 1/2 teaspoon Creole seasoning (such as Tony Chachere’s Creole Seasoning)
  • 1/4 teaspoon onion powder
  • 1/2 teaspoon garlic powder, divided
  • 1 1/2 cups shredded rotisserie chicken
  • 1 cup frozen cubed potatoes
  • 1/2 cup frozen sweet corn kernels
  • 1/2 tablespoon chopped fresh parsley
  • 15 buttery round crackers (such as Ritz), crushed
  • 2 tablespoons unsalted butter, melted
  • 1/2 cup shredded mozzarella cheese

Garnish (optional)
1/2 tablespoon diced green onions

INSTRUCTIONS:

Ingredients

  • 1/2 can cream of chicken soup
  • 1/4 cup cottage cheese
  • 1/4 cup sour cream
  • 2 ounces cream cheese, at room temperature
  • 1/2 teaspoon Creole seasoning
  • 1/4 teaspoon onion powder
  • 1/2 teaspoon garlic powder, divided
  • 1 1/2 cups shredded rotisserie chicken
  • 1 cup frozen cubed potatoes
  • 1/2 cup frozen sweet corn kernels
  • 1/2 tablespoon chopped fresh parsley
  • 15 buttery round crackers (such as Ritz), crushed
  • 2 tablespoons unsalted butter, melted

Instructions

  1. Preheat the oven to 350° F (175°C). Spray a 6 inch square baking dish with non-stick cooking spray. Set aside.
  2. In a medium bowl add the cream of chicken soup, cottage cheese, sour cream, cream cheese, Creole seasoning, onion powder, and 1/2 teaspoon of the garlic powder and stir until well blended.
  3. Add the chicken, potatoes, corn and parsley and mix until evenly coated. Place the mixture in the prepared baking dish and smooth out the top with a silicone spatula.
  4. Sprinkle the mozzarella cheese evenly over the casserole. Set aside.
  5. In another medium size bowl add the crushed crackers, melted butter, and remaining 1/4 teaspoon garlic powder and stir until the crackers are evenly coated.
  6. Sprinkle the cracker mixture over top of the mozzarella cheese.
  7. Place the baking dish in the preheated oven and bake for 30-35 minutes or until the edges of the casserole are hot and bubbly and the crackers are golden brown in color.
  8. Garnish with diced green onions if desired.

Notes

  • If your baking dish is completely filled to the top, place the baking dish on a foil lined baking sheet to catch any drippings for easy clean up.
  • You can make this casserole ahead of time (unbaked) and without the topping, cover and freeze it for up to 3 months. I find it best to do this in an aluminum pan with a foil lined lid so that it freezes better.
