Christmas Breakfast Casserole Recipe

If you’re looking for a festive and easy-to-make breakfast recipe for two people, this Christmas breakfast casserole is the answer. It contains all the ingredients of a hearty breakfast but instead of making individual breakfast items it is combined and made into a casserole.

With the help of a few pre-made or purchased ingredients, this casserole comes together in a matter of minutes. Then all that is left to do is put it in the oven.

It is a great way to get a complete breakfast on the table without a lot of hands on work. Which is exactly why it makes for the perfect breakfast on busy weekday mornings and especially on Christmas morning.

Why Is It Called Christmas Breakfast Casserole?

Although this breakfast can be made any day of the year, it earns its name for two reasons. First, we always serve it as part of our Christmas morning feast.

For many years we would serve a full size version of this egg casserole along with Monkey Bread and French Toast Casserole. However now that there is just the two of us, I have adapted the recipe to make it in a smaller portion.

But it also gets its name because it is filled with the classic colors of the holiday season. Specs of red and green are scattered throughout the dish.

The red comes from the diced red peppers. And the diced green onions gives the Christmas breakfast casserole a pop of green color. Although, I also like to add diced jalapeno peppers to give it not only more flavor, but also more prominent green color.

Not only does it look festive, the taste is amazing! With just a few simple ingredients you will have a delicious breakfast for the two of you to get the holiday off to a great start.

6 Ingredients For Christmas Breakfast Casserole

1. Eggs – Not only are eggs a classic breakfast item, they are one of the binding agents for the casserole.

2. Milk – Just like when making scrambled eggs, milk will be whisked with the eggs to lighten up the casserole.

3. Bread – To absorb some of the moisture we will add 2 slices of bread. They also assist the eggs in binding the casserole together.

Use two slices of traditional white bread and cut the bread into cubes before adding it to the other ingredients.

4. Sausage – Cooked, crumbled sausage is the choice of breakfast meat. You can use pork, turkey or chicken sausage.

5. Vegetables – As mentioned above red pepper and green onions are used to give the breakfast casserole the colors of Christmas. But feel free to add in whatever veggies that you prefer.

6. Cheese – Another way to add flavor and to make sure the casserole holds together enough to be cut easily is to add shredded cheese. Although shredded Sharp Cheddar cheese provides great flavor, you can use whatever shredded cheese that you prefer.

7. Seasonings – Besides salt and pepper, add a dash of cayenne pepper powder to enhance the flavor of the other ingredients.

Overnight Christmas Breakfast Casserole Option

With a few prepared ingredients you can get this casserole made and in the oven in less than 10 minutes. However, you can also prepare it the night before you are serving it to make it an overnight casserole.

It is a great option to have breakfast that is already prepared and just waiting to be put in the oven the minute that you wake up. Then by the time coffee is made and poured, breakfast will be minutes from being ready to serve.

In order to make it as an overnight casserole simply prepare the recipe as instructed but instead of baking it, cover the dish and place it in the refrigerator. Then when you are ready to cook the casserole, remove it from the refrigerator and then preheat your oven.

Bake as instructed, although you will need to add 3-4 minutes to the baking time since the casserole will still be chilled.

Recipe Tips

Whisk the eggs before adding the other ingredients. Otherwise bits of peppers, onions and bread will get in the middle of the whisk and will be hard to remove.

Use both the white and green portions of the green onion. Many people only use the white portion, but the greens add both flavor and color to the Christmas breakfast casserole.

For a richer flavor, use whole milk instead of 2% or skim milk. You can also use plain, unsweetened plant based milk as well.

Add toppings to the the casserole to add more flavor. Suggested toppings: sour cream, salsa, shredded cheese, sliced avocado.

Possible Recipe Variations

Besides using different varieties of cheese, there are other ways that you can make your breakfast casserole exactly how you like it. Here are some common recipe variations:

Meat Lovers Breakfast Casserole: Add more meat or substitute the meat with bacon, ham or chorizo. Just make sure the meat is cooked before adding it to the egg mixture.

Ham and Cheese Breakfast Casserole: This is a classic breakfast casserole that is always a crowd-pleaser. Use your favorite type of ham and cheese, and add in some chopped vegetables for extra flavor.

Vegetable Breakfast Casserole: This healthy and flavorful casserole is perfect for a meatloess or vegetarian breakfast. Use your favorite vegetables, such as peppers, onions, broccoli, spinach, and mushrooms.

Christmas Breakfast Casserole Recipe For Two

INGREDIENTS

  • 3 large eggs
  • 3 tablespoons milk
  • 2 slices white bread, cut into 1-inch cubes
  • 1/4 cup diced red pepper
  • 1 green onion, thinly sliced
  • 1/3 cup shredded sharp cheddar cheese
  • 1/3 cup ground breakfast sausage, cooked and crumbled
  • salt and ground black pepper, to taste
  • 1/8 teaspoon cayenne pepper powder, optional

INSTRUCTIONS

Preheat oven to 350°F (175°C). Spray a small 2 cup oval baking dish with non-stick cooking spray. Set aside.

In a medium size mixing bowl, combine eggs, milk, bread, red pepper, green onion, cheese and sausage and mix until well incorporated. Season with salt, pepper and/or cayenne pepper powder.

Pour the egg batter into the baking dish. Place the dish in the hot oven and bake 20-25 minutes. You will know when the casserole is ready when the mixture is just firm and not too jiggly in the center.

Then remove the dish from the oven and let it sit for 2 minutes before serving.
