If you are you looking for a quick and easy recipe that’s packed with a lot of flavor then you will love this Crock Pot Mississippi Chicken recipe. Chicken breasts are nestled in the bottom of your slow cooker and topped with au jus gravy mix, ranch dressing mix, pepperoncini peppers and butter.
Once cooked the chicken is so tender that it easily shreds apart with two forks. Then you can use the meat in a variety of ways.
My favorite way is to serve it as a sandwich. However, in the middle of winter, I prefer to serve it with mashed potatoes, rice or pasta as a complete comfort food meal.
However, what I really love about this recipe is how simple it is to make. It is a quick and easy, ‘dump and go’ recipe.
This means that you literally put the ingredients in the slow cooker, turn it on, and walk away. Then when you are ready to eat all that is left to do is to shred the meat.
What Type of Chicken To Use
When it comes to what type of chicken to use to make this Crockpot Mississippi Chicken recipe, boneless, skinless chicken breasts are the ideal choice. They’re lean, cook evenly, and absorb the flavors from the other ingredients.
However, if you prefer you could also use boneless, skinless chicken thighs. They take a little longer to cook, but when the fat in the thighs breaks down they produce a more tender and juicy result.
Pepperoncini Peppers
Pepperoncini peppers are mild, tangy, and slightly sweet yellow, Italian peppers. They’re often pickled and used in salads, sandwiches, or as a garnish.
You can most often find them in a glass jar in the condiment aisle near the jars of pickled jalapeno peppers. In this recipe, they add a slightly tangy flavor with a slight bit of spice to the chicken.
Au Jus Gravy Mix vs. Onion Soup Mix
In this Crock Pot Mississippi Chicken recipe, you have the choice to use either au jus gravy mix or dry onion soup mix. The au jus gravy mix creates a slightly rich and deep flavor with a more pronounced beefy taste.
On the contrary onion soup mix gives the chicken a lighter flavor. Either option will yield a delicious result, so choose according to what you prefer or have on hand.
However, I most often use the dry onion mix because I am left with 1/2 a packet after making my Crock Pot Cube Steak and Gravy recipe.
Dry Ranch Dressing Mix
For this recipe, you’ll only need half a packet of dry ranch dressing mix. A standard packet of dry ranch dressing mix contains about 3 tablespoons of mix.
Therefore if you purchase a jar of the seasoning rather than the packet you will need 1 1/2 tablespoons of the mix.
No Additional Liquid Required
You might be surprised to find that this Crock Pot Mississippi Chicken recipe doesn’t call for any liquid products. That’s because the chicken and pepperoncini peppers will produce their own juices during the cooking process.
In addition, the butter will melt and combine with the other ingredients which will create a rich, flavorful sauce.
How To Shred The Meat
After the chicken has cooked, you will need to shred the meat. Because the meat is so tender the easiest way to do this is by using two forks.
Simply hold a fork in each hand and use them to gently pull the chicken apart into smaller pieces. The chicken will shred easily. Then place the chicken back into the crock pot to soak up all of those wonderful juices.
However, if you prefer, you can shred the Mississippi Chicken right in the crock pot using a hand mixer. It is a quick and easy way to shred the meat with very little effort.
Ways To Serve Crock Pot Mississippi Chicken
What I love most about this recipe is that you can serve it in a variety of ways. Most often I will enjoy it as a sandwich by placing the shredded chicken between a soft hamburger bun.
Although the sandwich is delicious as is, sometimes I will top it with a basic coleslaw mixture or pickles for added crunch.
However, if I am in the mood for a more hearty and comforting meal I will serve it over a bed of rice or mashed potatoes. Or how about in your morning omelet?
You can also make it a low-carb, Keto friendly meal by serving it with cauliflower rice, over a green salad, or as a wrap in lettuce leaves or low-carb tortilla shell.
The options are endless, so don’t be afraid to get creative and try new ways to enjoy this delicious recipe!
