Easy Buffalo Chicken Dip Recipe – Perfect Amount For 2-4 People

When you are wanting a tasty appetizer to eat while watching your favorite sports team or television show this Easy Buffalo Chicken Dip recipe is just the answer.

A cheesy dip filled with all the flavors of classic Buffalo chicken wings. It is the perfect appetizer when served with tortilla chips.

However all of the ingredients are naturally low in carbohydrates. Therefore, it also makes for a fantastic appetizer when served with celery sticks for those who are on a low-carb or Keto diet.

So what makes this dip different than all the rest of the Buffalo Chicken Dip recipes out there? First of all, it is designed to feed 2-4 people.

It can easily be shared with another couple on game night. However, the dip is so good that I even make it for just the two of us when we are watching football games on the weekend.

And by Sunday night, and usually much earlier than that, the dip is long gone. It is so addicting that every time you pass by the counter it is hard to resist sinking a chip into it.

But best of all, it is easy to make. With just a few ingredients, you can have this dip on the table in under 20 minutes!

A Great Use For Leftover Rotisserie Chicken

This Buffalo Chicken Dip is so easy to make when you have leftover rotisserie chicken. Simply shred the leftover meat and add 1 cup of it to this recipe.

Because chicken is our main source of protein in my house, I make a whole chicken or purchase a store bought rotisserie chicken once a week.

Then after eating the first meal, I save the leftover chicken for other recipes throughout the week. I will make Chicken Broccoli Stuffing Casserole, Homemade Chicken Salad, Barbecue Chicken Wraps and even Chicken Pot Pie with the leftovers.

It is a great way to save time in the kitchen on a busy weeknight and when making this appetizer.

No Leftover Chicken, No Problem!

However, if you don’t have any leftover rotisserie chicken, don’t worry, you still can make this delicious dip.

You could cook a small to medium size chicken breast and shred it yourself. Do this by boiling the chicken, baking it in the oven, or make Instant Pot Shredded Chicken.

But I have an easier solution. Purchase a 5 ounce can of cooked and shredded chicken at the grocery store.

You can find cooked canned chicken in the same aisle that the tuna fish is located. Just look for a small can that has cooked white chicken in water.

Then open the package, drain it and add it to this recipe. Separate the strands with a fork and you will have close to one full cup of cooked and shredded chicken.

What Buffalo Wing Sauce To Use To Make The Chicken Dip

A common question when it comes to making this Easy Buffalo Chicken Dip is what is the best Buffalo sauce to use. And the answer is quite simple.

Use whatever sauce that you enjoy on your chicken wings. There are so many different varieties of Buffalo sauce that you can purchase so pick one that you enjoy.

For instance, several famous wing restaurants have their own sauce for sale at both their restaurant and in grocery stores. And all have a slightly different flavor and heat level.

For instance, you can find mild, medium or hot Buffalo sauce at many locations. And if this is your first time making Buffalo Chicken Dip and you want to serve it to a crowd, I suggest sticking to Frank’s Original Buffalo Wing sauce.

It has the traditional flavor, without a massive amount of heat. However, Frank’s does make a Hot Buffalo sauce that will please your heat loving friends as well.

So now that you know what type of chicken you can use and what type of wing sauce, let’s get to the recipe!

An easy way to measure Buffalo wing sauce and Ranch dressing is to use a push measuring cup.

Easy Buffalo Chicken Dip Recipe

INGREDIENTS

  • 1 cup of cooked shredded chicken
  • 4 oz. block cream cheese, softened
  • 1/4 cup buffalo wing sauce
  • 1/4 cup prepared ranch dressing
  • 1 cup Mexican blend cheese

For Serving

  • tortilla chips
  • celery sticks

INSTRUCTIONS

Before making this Easy Buffalo Chicken dip, set a half of a bar of cream cheese out to soften. Cover and place the other half back in the refrigerator.

It will take about 30 minutes to soften at room temperature. However, if you are in a hurry, take the cream cheese out of the foil and place it on a microwaveable plate.

Microwave for 10 seconds. Check to see if it is soft enough to spread with a knife. If not, continue to microwave at 5 second increments.

While the cream cheese softens, preheat the oven to 375°F (190°C).

Once the cream cheese is able to be spread with a knife, spread it evenly in the bottom of a small, 1/2 quart baking dish. This could be a large ramekin, or a small oval baking dish like I used.

You can use Mexican blend cheese, sharp Cheddar cheese or even Pepper Jack cheese if you prefer.

Then add the cooked and shredded chicken evenly on top of the cream cheese spread. Set aside while you measure out the wing sauce and ranch dressing.

I use a Push Measuring Cup to measure out thicker items such as peanut butter, Ranch dressing, or mayonnaise. It allows me to get the accurate amount in the measuring cup without the worry of getting it all out and into the bowl.

Place the Buffalo sauce and Ranch dressing in the top of the measuring cup and flip it over on top of the chicken. Then push the bottom up and your ingredients will easily come out of the cup.

Spread the sauce and dressing evenly over the shredded chicken. Then sprinkle the shredded cheese on top so that it covers the entire dip.

Bake Time

Place the Buffalo Chicken Dip in the preheated oven and bake for 15-18 minutes or until the cheese is bubbly and lightly gold in color around the edges.

Although you could serve it right away, I prefer to stir it with a spoon to mix all the ingredients together. This helps ensure that every bite will taste exactly the same.

Serve warm with tortilla chips and/or celery sticks.

1. Can I use fat free cream cheese and fat free ranch dressing?

Although the most flavor will come from full fat cream cheese and Ranch dressing, you can use reduced-fat or fat-free varieties if you prefer.

However, remember, if you are eating a Keto or low-carb diet the lower fat versions tend to have more carbs than the full fat varieties.

2. Can I make this in a convection oven?

If you have a convection microwave oven, use the convection bake setting. Set at 375°F and cook for 12-16 minutes or until the cheese is melted and bubbly.

Because there are milk products included in the ingredients, be sure to let the dip set out on the counter no longer than 2 hours.

Then whenever you need a snack, scoop some out and reheat it in the microwave until warm.

Creamy Buffalo Chicken Dip that is the perfect amount for two people. It makes a great dip when you are watching your favorite tv show or when watching your favorite sports team.

Ingredients

  • 1 cup of cooked shredded chicken
