Although, the cost is actually even cheaper per serving when you consider that this recipe makes enough for 3 servings. Therefore it is a great recipe to keep on hand not only for its fantastic flavor, but also as a budget friendly recipe as well.
Customize The Ingredients
Best of all, you can easily customize the ingredients for this Skillet Sausage and Potatoes Recipe to make it to your liking. For instance, the type of sausage that I used for this recipe was chicken sausage.
We tend to eat chicken sausage in our house more often than pork sausage for health reasons. However, you can use whatever type of sausage that you like.
From sweet Italian, hot & spicy sausage, or chicken sausage that is stuffed with cheese and spinach, they all work in this recipe to make a fantastic dinner.
Not a fan of green pepper or don’t have any on hand? You can use red, orange or yellow sweet peppers instead.
And the same holds true if you don’t have any sweet bell peppers on hand. You can use a full size green pepper to make dinner.
Like things spicy? How about adding in diced jalapeños? And don’t forget the Tony Chachere’s More Spice Cajun Seasoning to add more heat to the dish.

Skillet Sausage and Potatoes Recipe

INGREDIENTS
- 3/4 lb. red or gold new potatoes
- 1 tablespoons extra virgin olive oil
- 2 links chicken sausage (6 ounces)
- 3/4 small onion, chopped or thinly sliced
- 1/2 cup red pepper, chopped or thinly sliced
- 1/2 cup green pepper, chopped or thinly sliced
- 1 clove, garlic minced
- Salt & pepper, to taste
- Cajun seasoning, to taste
INSTRUCTIONS
The first step to making this recipe is to prepare the potatoes. If you are using small, new potatoes, place them in a large pot (whole) and cover them with cold water.
Then place the pot over medium-high heat and bring the water a boil. While you are waiting for the water to boil for the potatoes (because this seems like it will take forever when you just stare at it), prepare the sausage, onions and peppers for the skillet.
Start by slicing two cold, dinner size sausage links into 1/2 inch rounds. Then chop the green and red bell peppers and onion into 1/4-1/2 inch size pieces or slices and set aside until the potatoes are finished cooking.
Once the potatoes can be penetrated with a fork, but are not yet fall apart tender, turn off the heat. The time required for boiling the potatoes to this point will depend on the size of the potatoes.
How Long To Boil Potatoes
For small new potatoes, it will take approximately 8 minutes. However, larger potatoes can take up to 12 minutes to reach this level of doneness. Therefore, it is best to choose potatoes similar in size or cut larger potatoes in half prior to cooking.
Once the potatoes are ready, stop the cooking process by draining them in a colander and then running cold water over top of them. You could also drain the water and place them in an ice water bath instead.
The key here is that you don’t want the potatoes to continue cooking once they have been drained. Now let the potatoes cool until they can be handled.
Then dice the potatoes, skin and all, into 1/2 – 1 inch sections. Set the potatoes aside while you prepare the skillet.
Skillet Cooking Instructions
In a large skillet placed over medium heat add the extra virgin olive oil. Once the oil is hot and shimmering, add the diced potatoes to the pan.
Cook the potatoes until lightly browned on all edges, flipping frequently so that all sides are evenly brown. Then add the sliced sausage, onion, red pepper and green pepper to the skillet.
Continue to cook the ingredients in the skillet until the sausage pieces turn light golden brown and the potatoes, onions, and peppers are tender, yet still slightly crisp.
Right before you are ready to serve this delicious dinner, add the minced garlic and Cajun seasoning (if using) and toss and cook for 1 minute. Finally, taste and season with salt, pepper and additional Cajun seasoning if desired.

1. What are new potatoes and where can I find them?
Red and gold new potatoes are basically potatoes that have started to grow in the ground and are picked before they reach full size. They are very tender in texture and have an extremely thin skin.
You can find new potatoes at most large grocery stores. Look for a bin of tiny potatoes or a bag of multicolored potatoes next to the more well known Russet potatoes.
If you buy a bag, be sure to save a few to make Air Fryer Roasted Red Potatoes. They are super easy to make and are a great side dish to serve with just about anything.
2. Can I use Russet potatoes instead of new potatoes?
I highly recommended using new potatoes for this recipe because of their creamy texture and crispy exterior when par boiled and then put in the skillet. However, if you have extra Russet potatoes in the pantry, and aren’t planning to make a trip to the grocery store, go ahead and use them.
Although, it would be best to peel and cut the potatoes before boiling them. Russet potatoes have a thicker skin that doesn’t cook down well in this recipe and will leave an odd texture.
Therefore, if you are going to use Russet potatoes for this Skillet Sausage and Potatoes recipe, be sure to peel them first.
3. How do I store and reheat leftovers?
If you have any leftovers, store them in a closed container in the refrigerator for up to 5 days. Then reheat in a skillet over medium heat with 1 teaspoon of water until warm, approximately 5 minutes.
