Smoked Sausage Casserole Recipe

Smoked Sausage Casserole is one of those easy, comforting meals that’s perfect for busy nights, weekend meal prep, or just when you want something hot and filling without a lot of effort. This dish uses a handful of simple ingredients – frozen hash browns, smoked sausage, cheese, and sour cream to create a baked casserole that’s creamy, cheesy, and packed with amazing flavor.

Whether you’re feeding two people and want leftovers or looking for something you can portion out and reheat for lunches, this Smoked Sausage Casserole is a go-to recipe worth keeping on hand. Everything mixes together in one bowl and bakes up golden brown in just 40 minutes.

It’s the kind of meal that tastes delicious but requires almost no work. Believe me, once you try this recipe you’ll want to make it again and again.

What Makes Smoked Sausage Casserole So Good

Smoked sausage adds rich, savory flavor to this dish without any extra seasoning needed. Since it’s fully cooked, all you have to do is slice it up and stir it in. It browns slightly while baking, giving the casserole a nice contrast to the creamy texture of the potatoes and cheese.

And you can’t beat the convenience of using a bag of hash brown potatoes in this recipe. There’s no peeling or chopping required – just thaw the frozen shredded potatoes ahead of time, and they’re ready to go. The potatoes help soak up the sour cream and soup mixture, creating a filling base that’s both creamy and slightly crispy on the edges after baking.

Then add in the sharp cheddar cheese to bring a bold flavor to the mix. Combined with sour cream and condensed cream of chicken soup, it gives the casserole a rich, smooth texture that holds together well.

To top off the dish use finely diced onion for a little bite and melted butter for richness, and you’ve got a full meal in one dish.

Choosing the Right Sausage for This Casserole

The key ingredient in Smoked Sausage Casserole is, of course, the smoked sausage. For this recipe, I use a 7 ounces (1/2 package) of fully-cooked smoked sausage like Kielbasa. It has a mild, smoky flavor that pairs perfectly with the potatoes and cheese.

If you want to switch things up, here are a few other sausage options that work:

  • Turkey smoked sausage for a lighter version
  • Andouille sausage if you like a little heat
  • Chicken sausage with herbs or apple for a slightly sweet flavor

Make sure the sausage you choose is fully cooked, so it only needs to heat through in the oven.

Mixing It All Together

Now that you have all the ingredients it is time to put this casserole together, and it couldn’t be easier. Just grab a large mixing bowl and stir all the ingredients together until well combined.

The sausage should be cut into bite-sized pieces so you get a little bit in every scoop. Use a sturdy spoon or spatula to make sure the cheese, sour cream, soup, and butter are evenly spread throughout the potatoes.

Once everything is mixed, pour it into a greased 8 x 8-inch baking dish. You don’t need to cover it – just put it in the oven and let it bake until it’s hot, bubbling around the edges, and starting to brown on top. It takes about 40 minutes at 350°F.

What to Serve with Smoked Sausage Casserole

This casserole is filling all on its own, but if you want to serve something on the side, try one of these options:

  • A simple green salad with a light vinaigrette dressing to balance out the bold flavors of the casserole.
  • Roasted or steamed vegetables like broccoli, green beans, or Brussels sprouts.
  • A slice of bread or cornbread.

You can also garnish the top of the casserole with a sprinkle of fresh herbs like chopped parsley, chives, or even thinly sliced green onion. It adds a pop of color and freshness to balance the creamy texture.

Storing and Reheating Leftovers

Smoked Sausage Casserole stores really well. Let it cool completely, then cover and refrigerate leftovers in an airtight container. They’ll keep for up to 3 to 4 days.

To reheat, just scoop out a portion and warm it in the microwave or in the oven. If reheating in the oven, cover the dish loosely with foil and warm at 325°F until heated through. Add a splash of milk or broth if the casserole seems a little dry.

This recipe also freezes well. You can freeze individual portions or the entire baked casserole for a ready to heat meal whenever you need one.

Wrap tightly in plastic wrap and foil, or use an airtight freezer container. Thaw overnight in the refrigerator before reheating.
