Bubble Up Pizza Casserole Recipe (Small Batch Recipe)

One of my favorite weeknight meals to make for the two of us is Bubble Up Pizza Casserole. A delicious, easy to make casserole that takes less than 10 minutes to prepare and one that requires only 5 ingredients!

And it all starts with a can of refrigerator biscuits. Each biscuit is cut into small pieces and when put in the oven they ‘bubble up’ making the perfect base for the casserole.

Toss the biscuit pieces with your favorite pizza sauce, and then add cheese and pepperoni and you might just have your favorite pizza night dinner recipe!

Only 5 Ingredients – This Bubble Up Pizza Casserole is made with only 5, easy to find ingredients.

Prepared In 10 minutes – This recipe comes together very fast. All you need to do is brown the meat, cut the biscuits and then layer the ingredients. And if you do a little planning or purchase cooked sausage, you can have it in the oven in less than 5 minutes!

Bakes In Only 25 Minutes – Once the casserole goes in the oven, dinner will be on the table in less than 30 minutes. While the casserole bakes, catch up on the news, read your mail, or make a side salad to serve with dinner.

Easily Customizable – Just like with my pasta based Pizza Casserole, this recipe can easily be customized to your liking. Switch up the type of ground meat or cheese that you use, or add your favorite pizza toppings to make this dish exactly how you prefer.

Delicious, Delicious, Delicious – If you love pizza, you will love this recipe. It has always been a family favorite in our home when the kids were growing up. And now that I make it in a smaller version, it now makes a regular appearance on pizza night.

5 Ingredients Required

1. Grand Biscuits – Small Batch Bubble Up Pizza Casserole can be made with 4 or 5 Grand refrigerator biscuits. These are the large size biscuits that come in a tube of 8 biscuits. However, now you can also find them in a smaller tube that includes 5 biscuits.

2. Ground Sausage – You will need 1/2 pound of ground sausage. You can use ground breakfast sausage or hot Italian sausage if you like spicy foods.

Not a fan of pork sausage? No problem! Use turkey sausage as a healthier alternative. You can even purchase pre-cooked sausage and save time getting dinner on the table.

3. Pizza Sauce – Use your favorite pizza or marinara sauce. Want to add even more flavor, sprinkle in some dry Italian seasoning to the sauce.

4. Mozzarella Cheese – Mozzarella cheese is the obvious choice when making a pizza dish. It is best to grate your own cheese because pre-shredded contains an anti-caking agent that prevents it from melting smoothly.

5. Pepperoni – Top the casserole with pepperoni for a classic pizza dish. Or choose your favorite pizza toppings.

Steps To Make Bubble Up Pizza Casserole

1. Brown the Sausage – Brown the sausage in the skillet until no longer pink. Depending on the type of ground sausage that you used you may need to drain the grease.

2. Cut the Biscuits – Cut each biscuit into 8 small pieces. It is easiest to do this by cutting each biscuit in half. Then cut each half into two pieces. And finally cut the remaining 4 pieces in half once again. Once you have biscuit pieces, place them in a large mixing bowl.

3. Add The Sauce – Pour the pizza sauce over the cut biscuits. Then add the sausage and gently toss to combine. Pour the mixture into a greased 8 x 8 inch baking dish.

4. Layer The Toppings – Now it is time to add the cheese and pepperoni. Although the recipe includes a measured amount, use as much or as little as you would like.

5. Bake – Place the baking dish in the oven for 25-30 minutes and bake until hot and bubbly.

6. Rest – Once the casserole comes out of the oven let it rest for 5 minutes before serving. This will allow time for the sauce to thicken and it will be easier to serve.

Bubble Up Pizza Casserole Recipe

INGREDIENTS

  • 1⁄2 pound ground Italian sausage (mild or hot)
  • 1 tube (10.2 oz) Grand Biscuits (Southern Homestyle, 5 count)*
  • 1 jar (7 oz) pizza sauce
  • 1 cup shredded mozzarella cheese
  • 12 slices pepperoni

*You can use 1/2 of a larger tube of Grand Biscuits. This will give you 4 Grand biscuits and you can use the remaining biscuits to make Chicken and Dumplings.

For Serving (optional)

  • 2 tablespoons grated parmesan cheese
  • red pepper flakes, to taste

INSTRUCTIONS

Preheat the oven to 375℉ (190°C). Then spray an 8 x 8 inch baking dish with non-stick cooking spray. Set the dish aside and then prepare the filling.

Place a medium skillet over medium-high heat. Add the ground Italian sausage to the skillet and cook until it is no longer pink.

Be sure to crumble the meat as it cooks. Once it is cooked, drain if necessary and set aside.

*If you are using turkey sausage, be sure to add a little oil to the skillet so that it does not stick. And if you decide to use pre-cooked sausage, there is no need to heat the meat before adding it to the casserole.

Cut The Biscuits

Remove the biscuits from the tube. Then cut each biscuit into 8 smaller pieces (You should have 40 small pieces). Then place the biscuit pieces in a large mixing bowl.

Add the drained & cooked ground sausage and pizza sauce into the bowl with the biscuit pieces. Gently stir together until evenly combined.

Evenly spread the Bubble Up Pizza Casserole into the prepared baking dish. Then sprinkle the top with the mozzarella cheese.

Make rows of pepperoni slices on top of the cheese. I made 3 rows of 4 slices, but you can place them in random order if you prefer.

Place the baking dish in the oven and bake for 25-30 minutes or until the cheese is golden and the biscuits are cooked through.

Remove the casserole from the oven and sprinkle the parmesan cheese over top. Add red pepper flakes to taste.

Allow the casserole to rest for 5 minutes before serving.

Notes

  • It is best to shred your own cheese as store-bought pre-shredded cheese is coated with an anti-caking agent which prevents it from melting smoothly.
  • Use whatever variety of cheese that you prefer. Alternative suggestions: provolone, Italian blend, Mexican blend.
  • Turkey ground sausage and turkey pepperoni can be substititued for a healthier alternative. However you can also substitute ground beef or ground chicken as well. Just be sure to season plain ground meat with dry Italian seasoning for added flavor.
  • Feel free to add diced onion, diced green bell pepper or your favorite pizza toppings to the casserole.
