When it comes to easy to make dinner recipes it doesn’t get much better than this Crock Pot Sausage and Potato Casserole. Cubed frozen potatoes and sliced sausage links cooked in a creamy and cheesy sauce that is topped with a layer of shredded cheese.

Best of all, it requires only 6 ingredients and takes only 5 minutes to prepare! Simply toss everything in your slow cooker, turn on the heat and dinner is ready when you are.

It is the perfect weeknight dinner recipe when you don’t have a lot of time to spend in the kitchen. But it also makes a great comfort food meal that will help you get through a dreary day.

6 Ingredients – This recipe calls for 6 common ingredients that can easily be found at any grocery store.

No Canned Soup – For those who don’t like to use canned soup, this recipe is ideal! Instead of cream of chicken soup the creaminess comes from a combination of sour cream, cheese and chicken broth.

Easy To Prepare – Simply combine the ingredients and put them in your slow cooker. Yes, you will need to slice the sausage and dice an onion. However, everything is prepared and ready in under 5 minutes! Which is why I love this recipe on a busy weeknight or when I don’t want to spend time in the kitchen making dinner.

Tastes Delicious – It is amazing how the combination of such simple ingredients can produce so much flavor.

Easy Clean Up – Because everything is made in the slow cooker, clean up is a breeze. Want to make it even easier? Use a Slow Cooker Liner bag. Then at the end of the night, all you have to do is throw out the bag and wipe the crock and lid clean.

Ingredients Required

1. Frozen Potatoes – For this recipe it is best to use frozen cubed potatoes. These are often considered breakfast potatoes, but they are also the same potatoes that I sometimes use in my Cheesy Potato Casserole recipe.

Feel free to choose a bag of plain cubed potatoes. Or if you prefer you can choose a country style potato mix that also includes diced green bell peppers and diced onions.

2. Sausage – The other main ingredient in this casserole recipe is sliced sweet Italian sausage. You will need 2-3 full link sausages for this recipe. However, it is best to slice the sausage at an angle so that there is more surface area for it to absorb all of the great flavors of the creamy sauce.

3. Onion – A little onion goes a long way in providing a little flavor in this Sausage and Potato Casserole recipe. Use white, yellow or sweet onion.

4. Shredded Cheese – Finely shredded taco or Mexican blend cheese helps to make up the creamy sauce. However, it is also used on top to coat the casserole.

5. Sour Cream – Use full-fat, reduced-fat, or fat-free sour cream as part of the sauce.

6. Chicken Broth – To thin out the sauce a little chicken broth is added to the mix. As always, I recommend using low sodium broth.

Then season your meal with salt and pepper to taste.

What Size Slow Cooker To Use?

When making casserole recipes for two, I typically use my 4 quart Crock Pot. It is the perfect size for smaller batch dinner recipes.

You can also use a larger, 6 quart Crock Pot. However, the cook time will be shorter as the casserole will be thinner and cook faster.

Steps To Making Crock Pot Sausage and Potato Casserole

  • Slice the sausage into 1/4 inch slices. As mentioned above it is best to slice the links at an angle so there is more surface area.
  • Dice the onion.
  • Mix the potatoes, sausage, onion and some of the cheese together in the crock pot that has been sprayed with non-stick cooking spray or lined with a slow cooking bag.
  • Make the cream sauce by combining the sour cream and chicken broth. Then add salt and pepper to taste.
  • Stir everything together and smooth out the top.
  • Sprinkle the remaining cheese on top.
  • Cook until the potatoes are tender and the casserole is hot and bubbly.

Common Recipe Variations/Options

Sausage:

If you like spicy foods, use hot Italian sausage instead of sweet sausage. Or use the remaining Andouille sausage after making Chicken and Sausage Gumbo. Not a fan of beef or pork? No worries! Use chicken or turkey sausage instead!

Sour Cream:

Want to make this recipe a little healthier? Use full-fat plain Greek yogurt instead of the sour cream.

Seasoning:

For additional flavor add crushed red pepper flakes, cayenne pepper powder, and/or garlic powder to the mix.

Cheese:

Use your favorite blend of shredded cheese. Sharp cheddar, Monterey Jack and Colby cheese all work well in this casserole dish.

INGREDIENTS

  • 2 1/2 cups of frozen cubed potatoes
  • 6 ounces sweet Italian sausage (2-3 full size links)
  • 1/4 onion, diced
  • 1 1/2 cups of finely shredded taco blend cheese, divided
  • 1/2 cup sour cream
  • 1/2 cup chicken broth
  • salt and pepper, to taste

INSTRUCTIONS

Spray the inside of the slow cooker with non-stick spray. Or use a slow cooker liner bag to make clean up a breeze. Set aside.

Slice the sausage links in 1/4 inch slices at an angle. Add the sausage to the slow cooker.

Break the frozen cubed potatoes into small chunks. You don’t have to have them individually separated, however if there are large clumps it is best to break them into smaller chunks.

Add the potatoes, diced onion, and 1 cup of the cheese to the slow cooker and then stir to mix.

In a separate bowl, combine the sour cream, chicken broth, and salt and pepper to taste until evenly combined. Then pour the mixture in the crock pot and mix until incorporated.

Smooth out the top of the casserole and then sprinkle the remaining cheese over top.

Cook on LOW for 6 hours or on HIGH for 3-4 hours. The crock pot sausage and potato casserole is done when your potatoes are tender and the casserole is hot and bubbly on the edges.

Serve immediately.

  6. Cook on LOW for 6 hours or on HIGH for 3-4 hours. It is done when your potatoes are tender.
  7. Serve immediately.

Notes

  • Do not overcook, or the hash browns will begin to turn to mush.
  • You can add 1/2 can of cream of chicken soup in place of the chicken broth for a thicker, creamier consistency.
  • Substitute sweet Italian pork sausage with any variety of sausage that you prefer. I most often use chicken sausage links but you can also use turkey or beef sausage.
  • If using individual sausages for this recipe you will need two sausages. Just be sure that they are the larger sausages, and not the breakfast links.
