1. Potatoes

The type of potato that you choose in this recipe is important. Because we want the potato to maintain its shape once cooked, it is best to use low starch, waxy variety of potato.

New, red, or fingerling potatoes will hold their shape when cooked low and slow. They also have a thin skin so you don’t even need to peel them before they go into the slow cooker.

However, I prefer to use Yukon Gold potatoes for this barbecue pork chops and potatoes recipe. Not only do they maintain their shape, they naturally have a slight buttery flavor that pairs perfectly with the barbecue sauce.

However, avoid using Russet or Idaho potatoes because they have a high starch content. When cooked for long periods of time they will become super soft turn to mush.

2. Pork Chops

When it comes to purchasing pork chops for this recipe you have two choices. You can choose bone-in pork chops or thick, boneless pork chops.

The bone-in chops add extra flavor and moisture to the dish. However, the thicker, boneless porks chops are easier to eat.

And because the bone in chops are fairly thin, they will cook in just about the same amount of time as the thicker bone in pork chops. However, steer clear of using thin pork chops in this recipe.

That is because the thin pork chops will cook faster than the potatoes. And that means your pork chops will turn out dry by the time the potatoes become fork tender.

3. Barbecue Sauce

To add flavor to naturally bland pork chops and potatoes, barbecue sauce is added. The smoky and tangy flavor pairs perfectly with the two main ingredients.

Use your favorite store-bought standard barbecue sauce or get adventurous and use a bold and spicy sauce to add more flavor to the dish. Or if you prefer, make your own Homemade Barbecue Sauce.

The Other Ingredients….

4. Onion

Although you could simply add the potatoes, pork chops and barbecue sauce to the crock pot and call it a meal, it is best to add a little more flavor to the recipe. Therefore, sliced onions are layered on top of the potatoes before the barbecue sauce is poured on top.

You can use white, yellow or sweet onions. However, if you aren’t a fan of onion, you can simply skip them.

5. Bacon

Once the pork chops are cooked through, cooked slices of bacon are added on top of each pork chop. This not only adds a layer of of smokiness and richness to the dish but also adds a crisp texture to your meal.

6. Colby Jack Cheese

If topping the pork chops with bacon wasn’t enough, add a layer of cheese on top. Not only does it add a little more flavor, it also holds the bacon in place when being served.

Colby Jack cheese has mild flavor that won’t over power the other ingredients. In addition it is an excellent cheese to use for melting. However, feel free to use other varieties of cheese if you prefer.

Steps For Making Crock Pot Pork Chops and Potatoes

  • Prep Your Crock Pot: Begin by spraying a 4-quart or larger crock pot with non-stick spray. This step ensures that your meal won’t stick to the pot, making cleanup a breeze.
  • Layer the Potatoes: Lay the sliced Yukon Gold potatoes down in the bottom of the crock pot, arranging them as much in a single layer as possible. However, some slight overlapping is okay.
  • Season and Add Onions: Sprinkle the potatoes with a little salt and ground black pepper for flavor. Then scatter the thinly sliced white onions over the seasoned potatoes.
  • Barbecue Sauce: Pour half of the barbecue sauce over the top of the potatoes. Be sure to spread it out evenly, covering the entire surface. This will help the potatoes on top to cook and absorb the flavor.
  • Add The Pork Chops: Gently place the 2 pork chops on top of the bed of potatoes, onions and barbecue sauce. This will help ensure that the bottom of the pork chops absorb just as much flavor as the top surface.
  • More Barbecue Sauce: Pour the remaining barbecue sauce over the top of the pork chops. Be sure that the entire top surface is coated.

Cook Time Required

Cover your crock pot and let it work its magic. You can choose to cook on HIGH for 4 hours if you’re in a bit of a hurry or LOW for 7-8 hours if you want to set it and forget it.

Regardless of your temperature choice, do not open the lid during the cooking time. It’s essential to keep the heat trapped inside the crock pot so that the barbecue pork chops and potatoes cook adequately.

Add The Toppings

Once the cook time is up and the barbecue pork chops and potatoes are finished cooking, it is time to add the toppings. First, cut each slice of cooked bacon in half.

Then place two halves on each pork chop. Place a slice of Colby Jack cheese over the slices of bacon.

Now place the lid on the crock pot and let the cheese melt. This should take approximately 10 minutes.
