INGREDIENTS

  • 1/2 pound Yukon gold potatoes
  • 2 boneless pork chops, regular cut
  • 1/2 small onion, sliced into thin strips
  • 1 TBSP butter, melted
  • 1/3 cup chicken broth
  • 1 TBSP lemon juice
  • 1/2 tsp. dry Italian seasoning
  • 1 garlic clove, minced
  • 1/2 tsp. salt
  • 1/4 tsp. fresh ground black pepper

Garnish Ingredients (Optional)

  • Chopped fresh parsley

To assemble the ingredients start by placing the sliced potatoes in the bottom of the crock pot and then add the pork chops on top of the potatoes.

INSTRUCTIONS

Wash the potatoes and slice them in 1/2 inch slices. Then set them aside.

Season the pork chops with salt and pepper to taste. Set the pork chops aside while you slice the onions.

Cut an onion in half and then save one half for another recipe. Place the remaining half of the onion cut side down and slice the onion in thin strips and set aside.

Make The Garlic Herb Butter Sauce

In a small bowl melt the butter in the microwave. You can also melt the butter in a sauce pan and then pour it in a small bowl.

Add the chicken broth, lemon juice, dry Italian seasoning, minced garlic, salt and pepper to the bowl with the butter. Then whisk until well incorporated and set aside.

Cook on Low Heat for 5-6 hours or until the internal temperature of the pork chops reach 145°F when checked with an instant read digital thermometer.
