Best of all, this recipe requires only 5 ingredients! Which is why it makes for the perfect dinner on busy weeknights.
Yet, it is tasty enough to serve as a Sunday evening comfort food meal as well. Creamy shredded chicken and perfectly flavored diced potatoes that will leave your belly feeling full and satisfied.
However you can also make it a complete meal and start dinner off with a light and refreshing garden salad. Or how about adding a dinner roll, or a slice of No Yeast Bread to mop up that creamy sauce on the plate?
I have even made this recipe without the potatoes and served the shredded chicken over pasta or rice. It is an easy, yet versatile recipe that I am sure you will make time and time again.
INGREDIENTS REQUIRED
1. Chicken Breast
I prefer to use a boneless, skinless chicken breast for this recipe. Because the chicken is cooked low and slow in a crock pot, the chicken will remain nice and moist.
One large chicken breast can be used, or two small 6 ounce breasts. However, if you do have a large chicken breast it is best to cut it in half so that it cooks given the time provided. In addition, if you are using a small crock pot like my 1.5 quart Crock Pot, the chicken will fit better if it is cut into 2-3 pieces.
And yes, you can use boneless, skinless chicken thighs instead of the chicken breasts if you prefer. Chicken thighs provide a lot of flavor, although they have a higher fat content.
However, depending on the size of the chicken thighs, you may need to adjust the cook time. Thinner chicken thighs will cook at a faster rate than thicker chicken breasts.
2. Potatoes
It is best to use a waxy variety of potato in this crock pot Ranch chicken and potatoes recipe. I prefer to use Yukon gold potatoes because they have a natural buttery flavor and their texture holds up well when cooked in a slow cooker.
However, you could also use red skin, fingerling, or new potatoes. Although, be sure that the potatoes are cut into even size pieces so that they cook at the same rate.
3. Condensed Cream of Chicken Soup
Condensed cream of chicken soup is used as the base of the creamy sauce. Although, it is best to use a low-sodium or salt free soup. You can always add more salt later if desired.
However, you will not use an entire can of soup. You will only need 1/2 of a standard size can. Therefore, plan on transferring the remaining soup to a glass or plastic container and then cover and store in the refrigerator for 3-4 days.
Then you can use the other half it to make Crock Pot Chicken & Rice later in the week.
4. Chicken Broth
Because the cream of chicken soup is so thick, a little chicken broth is added to the soup to thin it out. Again, it is best to use low-sodium broth and add additional salt when serving.
If you don’t have chicken broth handy, you can substitute vegetable broth or even water if you prefer. However, chicken broth will give the crock pot chicken and potatoes the best flavor.
5. Dry Ranch Dressing Mix
You can purchase packets of dry ranch dressing mix in the salad dressing aisle at the grocery store. You will need 1/2 of a standard size packet for this crock pot Ranch chicken and potatoes recipe.
However, I prefer to purchase dry Ranch dressing in a plastic container rather in packets. This way I don’t have to worry about storing packets that are half full in my pantry.
1 packet of dry Ranch dressing = 2 tablespoons of the seasoning. Therefore, for this recipe you will need 1 tablespoon of the mix.

How To Make Crock Pot Ranch Chicken and Potatoes
This recipe couldn’t be easier to make! In fact, the entire thing is made right in the crock pot.
Start by placing the cream of chicken soup, chicken broth and dry Ranch dressing in the bottom of the crock pot. Then mix the sauce together until it is smooth.
Then add nestle the chicken breasts in the sauce. Flip them over one time so both sides are coated.
Finally, add the diced potatoes on top of the chicken. Then all that is left to do is to place the heat setting to low.
4 hours later, dinner is ready!
How To Serve Crock Pot Chicken and Potatoes
Once it is time to serve you must decide whether you want to shred the chicken or leave them whole. You can serve them either way.
If you decide to shred the meat, you can either do it directly in the crock pot or pull the chicken breasts out of the crock pot and shred the meat on a cutting board. However, if you shred the meat in the crock pot itself, the potatoes and meat will mix together making it difficult to serve the two ingredients separately.
Although you can serve it mixed together, you have two options to prevent this from happening. First, remove the potatoes from the crock pot before shredding the meat.
Then you can shred the meat with two forks right in the sauce. The second option is to remove the meat from the sauce and place it on a cutting board to shred.
Then remove the potatoes to your dinner plate and then place the meat back in the sauce and toss to coat before serving. Whichever way you choose to serve your meal, I am sure you will love it so much that you will want to make it over and over again!
