Easy ground beef stroganoff has become one of my favorite weeknight meals. A thick and hearty meal that is prepared and on the table in under 30 minutes!
Although traditional beef stroganoff is made with inexpensive slices of beef, this recipe uses ground beef instead.
It is a great way to use up the remaining half pound of ground beef leftover after making Meatloaf Muffins.

The ground beef is then cooked with diced onions, and simmered in a mushroom sauce until nice and thick. Sour cream is then added to the sauce and the mixture is served over wide ribbon, egg noodles.
A true comfort meal that is easy to make!
Easy Ground Beef Stroganoff Recipe
INGREDIENTS

- Sliced mushrooms
- Onion
- Ground beef
- Garlic clove
- Flour
- Beef broth
- Salt & Pepper
- Worcestershire sauce
- Sour cream

1. Egg Noodles
Classic Beef Stroganoff is served with wide ribbon egg noodles. You can find the pasta in factory sealed plastic bags in the same aisle as the boxed pasta.
However, if you have an egg allergy, like I do, there are options to purchase wide ribbon noodles that don’t contain egg. Although I shop at several grocery stores, I have only found this egg-free option at Wal-Mart: Egg-Free Ribbon Noodles.
However I am sure that other stores carry ‘eggless’ egg noodles as well.
2. Mushrooms
Stay away from white button mushrooms. They are basically just a filler and quite frankly will be tasteless in this ground beef stroganoff recipe. Instead, purchase whole or sliced Cremini or Baby Bella mushrooms.
Surprisingly, they are the same variety as white button mushrooms. However, they are harvested at a later stage and therefore have more flavor.

3. Onion
You will need 1/2 of a small onion for this easy beef stroganoff recipe. You can use white, yellow or a sweet onion.
4. Ground Beef
It is best to use lean 90/10 ground beef. However, if you wanted to be even healthier, use ground turkey or ground chicken instead.
For those who are vegetarian or Vegan, you can even use plant based crumbles in place of the meat.
However, if you don’t use ground beef be sure to change the name of the recipe to Easy Stroganoff For Two!
5. Garlic
This recipe calls for 1 clove of garlic. If you don’t have fresh garlic, you can use jarred minced garlic instead. 1 clove of garlic = 1 teaspoon of minced garlic.
6. Beef Broth
I always recommend using low-sodium broth in recipes. That way you can control how much sodium goes into your diet.
Even if you are using ground turkey or chicken, I still recommend using beef broth over chicken broth. The flavor of the beef broth is much more intense and flavorful.
However, if you are avoiding beef products, by all means, use chicken stock instead. And if you are using plant based crumbles because you are vegetarian or vegan, use vegetable stock.

7. Sour Cream
Any variety of sour cream can be used in this ground beef stroganoff recipe, including full fat, reduced fat, or even fat free. And if you have a dairy allergy or are vegan, you can use a plant based sour cream instead.
And for those who are looking for a little healthier alternative, use Greek Yogurt in place of the sour cream.
COOKING INSTRUCTIONS
The first step in making this Easy Beef Stroganoff is to cook the egg noodles according to the package directions. For two servings, use 1 cup of dried noodles.
While the noodles are cooking dice the onion. Then add the onions and ground beef to a large skillet over medium heat.
However, if you are using ground turkey, ground chicken or plant based crumbles, you will need to add 1 tablespoon of extra virgin olive oil to the pan. This will help the leaner meat not stick to the bottom of the skillet.
Use a wooden spatula to break up the beef as it cooks. Continue to cook until the beef is no longer pink. Then drain and return the beef and onion mixture to the skillet.

Add the sliced mushrooms and garlic to the pan and cook for 3-4 minutes. As the mushrooms begin to cook they will wilt and release some moisture.
Continue to stir as the mushrooms cook so that the garlic does not burn and become bitter.
Once the mushrooms are reduced stir in the flour and cook for 1 additional minute, or until the flour is no longer visible.
Then add the beef broth and Worcestershire sauce to the skillet and stir. Then add salt and pepper to taste.
Bring the mixture to a boil. Then once it is boiling, reduce the heat to medium low so that the liquid maintains a low simmer.
Simmer Until Thickened
Continue to maintain a simmer until the sauce becomes somewhat thickened. This should take about 8-10 minutes.
Remove the skillet from the heat and stir in the sour cream. At this time you can also add the cooked and drained egg noodles and toss everything together.

Although, if you prefer, you can serve the Easy Beef Stroganoff with the meat mixture poured on top of the egg noodles instead.
Garnish with chopped fresh parsley if desired and serve warm.
