Hamburger Potato Casserole – An Easy Comfort Food Recipe

If you are looking for a comfort food recipe that won’t break the bank then you will love this Hamburger Potato Casserole. Cooked ground beef smothered in a cream sauce and then layered between slices of red potatoes and onions.

Add a little shredded cheese and place the casserole in the oven to bake. Once the potatoes are fork tender and the cheese is melted and bubbly it is time for dinner!

It is a true comfort food recipe that is extremely versatile. In fact, I am pretty sure that I have had a version of this recipe in at least 10 different ways.

Hamburger potato casserole is a delicious and inexpensive dinner recipe.

Below the recipe below I have included those variations. However I am sure that you could come up with at least ten more without a lot of effort.

Although all of the suggestions use some sort of condensed cream soup, you can make your own homemade version instead. I sometimes have Homemade Cream of Mushroom Soup in my freezer and I will use that.

However, if you want to make homemade Condensed Cream of Celery Soup to use in this hamburger and potato casserole, follow the simple recipe below.

Homemade Cream of Celery Soup

Ingredients:

  • 2 Tbsp. butter
  • 1/2 cup celery, finely diced
  • 1/4 diced yellow onion
  • 1 clove garlic, minced
  • 1/4 teaspoon Kosher salt
  • 1/4 teaspoon ground black pepper
  • 2 Tbsp. flour
  • 1/4 cup evaporated milk
  • 1/4 cup chicken broth

Cooking Instructions:

Add the butter to a saucepan and let it melt over medium heat. Then add in the onion, celery, minced garlic, salt and pepper and stir.

Cook, stirring occasionally for 5-7 minutes so that the onion and celery become tender. Then add in the flour and whisk continuously for 1 minute.

Finally, add in the evaporated milk and chicken broth and continue to cook until thickened. Remove the pan from the stove and use the mixture in place of 1 can of condensed cream of celery soup.

The flavor will come from the cream of celery soup, garlic powder, onion powder and Italian seasoning. However feel free to add in some hot pepper flakes or cayenne pepper powder to add a little heat.

Hamburger Potato Casserole Recipe

INGREDIENTS

  • 1/2 pound ground beef*
  • 1/2 onion, divided
  • 1 can cream of celery soup, low sodium
  • 1 tsp garlic powder
  • 1 tsp. onion powder
  • 1 tsp. dry Italian seasoning
  • 1/4 tsp. salt
  • 1/4 tsp. ground black pepper
  • 3 small-medium size red potatoes
  • 1/2 cup shredded Mozzarella cheese

*If you purchase one pound of ground beef, be sure to save the other half to make Ground Beef Stroganoff. Another delicious comfort food recipe.

**For additional flavor, add 1/4 teaspoon cayenne pepper powder to the soup mixture.

INSTRUCTIONS

Preheat oven to 350°F (177°C). Then spray a small 1 quart baking dish with non stick cooking spray. Set aside.

Dice half of the onion. Set aside. Then slice the other half in long strips and set aside for later use.

In a skillet placed over medium-high heat add the ground beef and diced onions. Cook until the meat is no longer pink, then drain and set aside.

In a medium bowl mix together the cream of celery soup, garlic powder, onion powder, dry Italian seasoning, salt and pepper. This mixture will be what helps keep the hamburger potato casserole creamy.

Next, mix in the ground beef and onions in the soup mixture until well incorporated, set aside.

Slice the red potatoes in thin, 1/8 inch slices. Place half of the potatoes in the baking dish, separating them as much as you can.

Sliced potatoes will take over an hour to cook in the oven. Therefore, if you want to speed up the baking process par cook the potato slices first.

Then place half of the sliced onions on top of the potatoes. Pour half of the soup and beef mixture over the top, spreading it out to cover the potatoes and onions.

Sprinkle half of the shredded cheese on top. Then repeat the layers of potatoes, onion, soup/beef mixture and shredded cheese.

Add additional salt and pepper on top, per taste. Cover the hamburger potato casserole with aluminum foil that has been sprayed with non stick cooking spray. Tent the foil if the cheese is close to the top of the baking dish.

Bake Time Required

Place in the preheated oven and bake for 60 minutes.

Uncover and bake for an additional 10-15 minutes or until the casserole is hot and bubbly on the sides and the cheese starts to turn light golden brown in spots.

Optional Step: To speed up the cooking process par cook the potatoes by placing the sliced potatoes in the microwave and then cook for 5 minutes. Then add them to the recipe as instructed and bake the casserole for 30-45 minutes or until the potatoes are fork tender.

Remove the baking dish from the oven and let it sit for 5 minutes before serving.

Most Common Recipe Variations For Hamburger Potato Casserole

Although you can substitute the spices as well, below I have a list of some common substitutions for the main ingredients.

1. Ground beef, onions, green peppers, potatoes, cream of mushrooms soup, and peas.

2. Ground beef, onions, mushrooms, potatoes, cream of mushroom soup, and corn.

3. Ground beef, onions, potatoes, cream of chicken soup, carrots and peas.

4. Ground beef, onions, potatoes, Worcestershire sauce, cream of cheddar soup.

5. Ground beef, onions, potatoes, Worcestershire sauce, cream of mushroom soup, carrots, peas, green beans.

6. Ground turkey, onions, potatoes, cream of celery soup.

7. Ground turkey, onions, potatoes, cream of mushroom soup, mushrooms, peas.

8. Ground turkey, onions, potatoes, cream of mushroom soup, carrots, peas, green beans.

9. Ground chicken, red onions, potatoes, cream of chicken soup.

10. Ground chicken, onions, potatoes, cream of celery soup, cheddar cheese, carrots.

Use whatever cheese that you prefer on your casserole. Here I used Mozzarella, but Pepper Jack, Cheddar and Provolone are all great choices.
